Started the day rushing around the house as a result of my lack of preparation the night before. I usually get all my food ready in its respective tupperwares and pack my gym bag the night before. I am the anti-morning person and will do anything in advance in order to limit the amount of activity I have to accomplish when I’m half-awake. But nonetheless I woke in a great mood and left myself plenty of time to make up a couple
Chocolate Protein Pancakes:
1 scoop VPX 0-Carb Chocolate Protein Powder
2/3 cup Egg Whites
1/2 tbsp Coconut Butter
Walden Farms Calorie Free Maple Syrup
Coconut butter is a recent discovery of mine and I’m in love! Coconut oil is the only added fat I’m allowed at the moment so finding this delightful product made my week! It really adds something to a not-so-moist protein pancake, especially with my beloved Walden Maple Syrup. I also added a lil Sugar-free chocolate syrup to my Hazelnut flavored coffee this morning, kinda like a Snickers bar.. kinda
Had the other protein pancake for a snack, then my usual chicken breast & spinach bar for lunch. It’s become a bit of a habit for me to swing by Dutch Brother’s Coffee on my drive between work & school. Even though I am an extremely loyal Starbucks goer for lattes, so those have been cute out of my diet for some time now, Dutch Bros is my new fave because they have a better selection of sugar-free syrups I can add to my drip coffee. Today’s I added Sugar-Free Coconut and Sugar-Free Choc Macadamia syrups!
I have class until 5pm on Mondays & Wednesday and my favorite spin class starts at 5:30pm, so I basically sprint out of class as soon as that big hand hits the 12. By the time I got home I was super hungry.

I attempted to create a new protein pancake tonight for dinner which was a similar recipe to yours plus veggies mixed in. I didn’t quite mix the broccoli well enough so it was chunky. NOT GOOD! But did I eat it? Yes, yes I did.
