I’ve been so wrapped up in my fitness competitions stuff that I’ve failed to mention that Thanksgiving is actually my very favorite holiday! I love Christmas as much as the next person, but sometimes I feel like people just get wrapped up (pun intended) in the wrong things and forget the true meaning. I love Thanksgiving because it’s all about being Thankful for what you have, spending time with your loved ones, and of course food, not to mention football! On a related note, I do absolutely nothing related to Christmas until after Thanksgiving.. no music, no movies, no shopping. Ok I lied, I did get the Starbucks X-mas mug :p Once Thanksgiving is over however, it is certainly a decorating, baking and holiday movie watching free-for-all (trust, Love Actually will be watched at least twice by the end of the weekend, hehe).
Like every year before, I have so much to be thankful for; it overwhelms me and I can’t help but smile. The list could go on and on, but for this particular year, I am so thankful to get to spend the holiday with my parents who are flying down to Arizona on Thursday and will also get to see my fitness competition on Saturday. As I mentioned yesterday, I’ve been thinking about our Belated Sunday Thanksgiving menu for sometime. Remember I have had little variety in my diet since June and haven’t had much else but chicken breast, tilapia, whey protein powder and spinach for the last 10 weeks. And on that note, here’s a potential menu:
Breakfast – Can’t decide.. but a couple possibilities
And it’s totally possible that I’ll wake up and just want a giant bowl of Pumpkin Oatmeal, but now topped with a generous portion of almond butter!
Lunch/Snacks
Dinner & Dessert
I know I’m going to have to be careful only to eat little bits or I’ll make myself sick. My body is not use to a variety of foods, and lately even carb-days make my stomach feel a little funny.
Big yawn, time for bed, need to be at the gym at 6:30am for posing practice then a leg workout. Happy Hump Day.
Any menu suggestions or recipes are very much welcome! You all inspire me so much!!
I saw this recipe and thought of you!

Have a wonderful holiday!
That sounds great, bookmarked and added to the list!
For breakfast, the frittata sounds best! But I’m also not a big salmon fan for breakfast.
And the oatmeal with almond butter sounds AMAZING! I looooove that combo!
Lunch… I’ll search for a soup recipe later. I think I saw a good one awhile back and saved it! Do you need a recipe for hummus too?
Dinner… Sweet potato casserole and chocolate pecan pie both sound deliiiiish! Oh, well the cookies do too!
Thanks! I think I might go with the pumpkin or edamame hummus.. will have to be a last minute decision :p
Gah! This has me hungry! LOL!
I’m totally thinking, for brekkie you should combine the smoked salmon w/ a mushroom and cheese frittata.
I love this site, is it updated often? Bookmarked
