Pancake Delights & Healthy T-Day Links

Final Check-In

Happy Thanksgiving Eve everyone! Today has been delightfully relaxing but productive. Had my last check-in and posing practice this morning with my trainer. I somehow managed to loose weight over the last week even though I didn’t workout Wed-Sat. I think it’s the result of running around and being pretty stressed all weekend. We didn’t do body fat, but a couple of my measurements went down slightly. Trainer said I’m looking pretty tight right now, just need to be sure to hit my carb goal today (it’s carb-up day) and to get some carbs in me Friday night and Saturday morning so I’m not flat. Went into the gym this afternoon to run through my routine and will be going to my beloved Spin class tonight.

Protein Pancake Delights

So I must post these recipes, because even though they’re only slight variations, I’ve learned that the smallest changes make all the difference when cooking with Protein Powder. Today is Carb-Up day, so Sweet Potato and Oatmeal is being thrown into everything, which resulted in this delicious and very filling concoction. It was so moist & fluffy!

Sweet Potato Protein Pancake

1 scoop All the Whey Cake Batter Protein Powder

3 oz Sweet Potato (previously cooked)

3 tbsp Egg Whites

1 tbsp Sugar-Free Vanilla Syrup

1/8 tsp Cream of Tartar

Cinnamon to taste

Preheat a pan on the stove over medium head. Reheat Sweet Potato in the microwave for 30 seconds so it’s easier to blend. Then mix all ingredients with a hand mixer until smooth. Cook up pancake until golden brown on both sides. I topped mine with 0-Cal Walden’s Maple Syrup & Cinnamon. Enjoy!

This 2nd recipe I’ve made a couple times this week. It’s very similar to the above recipe but with Oats in place of the Sweet Potato. Nonetheless, here’s the official recipe. Oh and I have come to find that using a hand mixer instead of the Magic Bullet really helps to get the pancake fluffy :)

Snickerdoodle Oat Protein Pancake

1 scoop All the Whey Cake Batter Protein Poweder

1/4 cup Oats

3 tbsp Egg Whites

2 tbsp Sugar-Free Cookie Dough Syrup

1/8 tsp Cream of Tartar

Dash Stevia Extract

Cinnamon to taste (I use lots to get the snickerdoodle effect)

Preheat a pan on the stove over medium head. Mix all ingredients with a hand mixer until smooth. Cook up pancake until golden brown on both sides. Once again, I topped mine with 0-Cal Walden’s Maple Syrup & Cinnamon. The pic looks pretty similar too.

 

Finally.. Not a pancake recipe, but since it was so good I had it twice today (oh carb-up is lovely), I figured I should post. I’ve posted similar recipes before, it keeps getting tweaked, and is getting better and better! This is the latest:

Rich & Creamy Mocha Oats

1/3 cup Oats

1/2 scoop Nectar Chocolate Protein Powder (or another brand)

1 packet Starbucks Via

3/4 cup Liquid (I used 1/2 cup Unsweetened Vanilla Almond Breeze & 1/4 cup Water)

1 tbsp Sugar-Free Chocolate Syrup

1/2 tbsp Udo’s Oil

Cinnamon to taste

Mix everything in a bowl, microwave for 2 minutes (could vary, my microwave is weak). Sprinkle with Cinnamon.. devour!
