Hi all! Hope everyone had a wonderful weekend! Mine was pretty darn good.. no complaints :) Got started on this post pretty late, so I just have a quick photo-filled recap for ya.

The Partner Yoga Workshop today was so much fun! I ended up being partnered with someone I didn’t know, and even though I was a little hesitant at first, it ended up being a great learning experience… not to mention some killer stretches.

You know I love Monday workouts! On tap is an Arms & Core workout along with Spin and Flow Yoga.

Weekend Eats Recap

It’s the Granola Experimentation.. take 2! I ran across this recipe from Lean Bodies Health & Fitness and new it would be perfect for the PB Carries sent me. I followed the recipe using 1/2 c Almond slivers, substituted WF Maple Syrup for the Honey and didn’t include Dried Fruit or Chocolate Chips. I also ended up baking it twice as long. Strawberry Vega Pudding

1 packet Berry Vega

2 oz Nasoya Strawberry Silken Tofu

2 Strawberries

2 Ice Cubes

Blend & enjoy!

Plain Oikos mixed with 1 tbsp Unsweetened Cocoa and Stevia Extract..

I am loving overnight oats!

TJ’s Pomegranite Greek Yogurt + 1/3 c Oats + 1/3 c UVAB + 1 tbsp Chia Seeds, chilled overnight, topped with a couple Strawberries & <1 tbsp Unsweetened Coconut.. It’s so pretty :p .. and I’m such a dork :)

Something New Saturday!

Last week it was Spaghetti Squash, this week it was Kale!

I ended up cooking it stove top with a bit of Garlic then mixed in Butternut Squash and Honey Ham. The flavors were fantastic! I really like the Kale flavor, and can’t wait to try Kale Chips next..

After Yoga today all I wanted was a big salad. So here’s another version of ‘What isn’t in that?!’ Salad:

Baby Spinach, Kabocha Squash, Smoked Tofu, Strawberries and Pinenuts..

So I’ve been trying out various Tofu recipes, and bought more of the Nasoya Silken Creations.. any recipes suggestions I must try?

  1. The kale with butternut squash combo of flavors sounds sooo good. I tried kale for the first time last year. I was always afraid of it, heard it could be bitter. Now I love it in soups. Only made it as a side dish once (for Christmas dinner), but I may have to see what I can do with the squash too. It’s always nice to find new ideas! Your overnight oats with the strawberries looks so fresh. Yum.

  4. Just had some overnight oats with kefir :)

    You should make my famous kefir+Greek yogurt bowls–amaaaaaazing!!

    Try using silken tofu in smoothies…it adds protein and thickness and creaminess.
