Cats Like Tea Too

Hope you’re having a wonderful weekend, and if you’re in the US, are able to take advantage of the extra day!

FITNESS

Today’s fitness came in the form of watching ~22,000 marathon runners pass by at the PF Chang’s Marathon. We helped to set up the H20 station and passed out H20 to the runners. It was a great think today, but I was freezing! I wore a long sleeve shirt, a long sleeve fleece, a t-shirt and a jacket and was still cold! This took me back to my days as a Student Trainer at Cal. I worked with the Football team for a season. It was a great experience, and I got a lot of free clothing, which I still wear, but generally we were just glorified water girls. One of the many reasons I have sooo much respect for trainers!

I’d intended to go to Spin this afternoon, but got caught up catching up on Integrative Nutrition coursework, which I hadn’t done all week. I’m definitely looking forward to getting good workouts in tomorrow. On tap is Spin, Yoga Flow and Power Upper.

NUTRITION

I was definitely ready for a warm brunch when I got home from the race. So after I defrosted with a cup of coffee, followed by a cup of tea, I enjoyed a lovely and fulfilling bowl of Mounds Oats (1/4 c Oats, 2 tbsp Oat Bran, 1/2 c Unsweetened Chocolate Almond Breeze + 1/2 c H20, 1/2 scoop Chocolate Protein Powder, 1 tbsp Chia Seeds, topped with 1 tbsp Coconut).

Killer likes tea too..

And check out my new mug. I couldn’t resist, it screamed ’spring’ to me (after I packed up the Christmas mugs last week)!

Later on I snack on my current fave, Pumpkin Protein Overnight Oats, and topped it with 2 tbsp of TJ’s Omega Trail Mix.

Something New Sunday!

This weekend’s something new was Tempeh, specifically Trader Joe’s Organic 3 Grain Tempeh.

I tried a little bite first (it’s pre-cooked), and decided it would be perfect for a salad. I has just picked up Sweet Potatoes at the store, which I’d been craving all week, so I decided to give SnackFace’s Cheetahs a try. I’d seen these floating around the blogosphere and they always looked so good. I am happy to report, they’re as good as they look! After spraying a baking sheet with Organic Olive Oil Cooking Spray, I spread out the sliced Sweet Potatoes, lightly sprayed those, then sprinkled with salt-free Garlic & Herb Seasoning. I followed SnackFace’s directions, baking at 450 F for 30 minutes, flipping half-way through. At the same time I baked the Tempeh pieces for 15 minutes.

This salad was sooo refreshing!

And pretty, if I do say so myself :)

Actual Eats

Prep Day!

This week I finally used up my last batch of Pumpkin Hummus, and immediately wanted more. I loved this recipe, and it makes such a good portion that last for ages. I used this recipe but made a few adaptations.

Quick & Easy Pumpkin Hummus

15 oz can Garbanzo Beans / Chickpeas

15 oz Pumpkin

3 tbsp Tahini Hommus

1 tsp Olive Oil

3 tbsp H20

3/4 tsp Salt

1 tsp Cumin

1/4 tsp Ground Cayenne Pepper

1 tsp Garlic

It all goes into a food processor, and blend to desired consistency.

This is the Hummus I used. Love it by itself too.

I also roasted a few Chicken Breasts for the upcoming week. Gotta be prepared right!

Tonight I’m heading out in Old Town for a friend’s birthday party. In my usual fashion, I already looked up the menu. I can be a total sucker for tasty cocktails.. Think I have my eye on the ‘Little Critter’ Martini: Tuaca with Chambord and a splash of Sweet & Sour. Martini’s tend to have less calories than the larger, more complex mixed drinks (though I’m a fan of those too, haha). So glad I’m such a light-weight and that one is all I’ll want :) Have a great night!

    Oh those pumpkin oats + trail mix look FAB!!! I’m a huge trail mix fan!

    Note to self: put up Christmas mugs. I tend to always keep them out! LOL!

  4. Sadly, my hubby doesn’t care much for pumpkin hummus :-( Of course, maybe it was just my rendition! Hope you enjoyed yourself out with friends.
