Something New: Teeccino & Frozen Mounds Treat!

Hi lovelies! How has your weekend been so far? Mine’s been pretty uneventful for the most part. I slept in crazy late on today.. could have been those two martinis last night :p .. but I spent the rest of the day studying for my mid-term on Monday, well except for a workout interruption naturally. I went to a yoga class this evening that was absolutely packed. I don’t think it would have been possible to fit one more mat in that room. But even though it was crowded, and I was dripping sweat like crazy, we all had the same positive intentions & energy and the class was amazing. Everyone clapped at the end, and it was just what I needed to be energized to continue studying when I got home.

NUTRITION

Just a few food pics today. I seem to become a bit of a picture slacker on the weekends :p But I wish I would have taken one of breakfast, because it was a new combo and so good! I roasted both a mini Kabocha and large Kabocha slices. For breakfast I had half of the mini-Kabocha filled with 1/2 a serving of Vanilla Chai Vega Pudding (1 packet Vanilla Chai Vega mixed with 1 c Plain Greek Yogurt). The mix made a super thick & creamy pudding.. so good, and it complimented the sweet Kabocha perfectly.

Lunch was another new Vega mix! I tried the Smoothie Infusion Powder and mixed it with 3 fresh Strawberries, 3/4 c Strawberry Crystal Light, a couple spoonfuls of Silken Tofu and Ice. Was nice & light and refreshing!

Post-Yoga I had a fantastic dinner. Butternut Squash & Apple Soup with 5-grain Tempeh, Avocado and a spoonful of Cottage Cheese. These flavors went great together and it was super filling.

Frozen Fun

Dessert tonight was a new concoction, that I like to call..

Frozen Chocolate Yogurt Mounds Treat

6 oz Plain Greek Yogurt

1 tbsp Unsweetened Cocoa (I used Wondercocoa – 20 cals for 1 tbsp & Vegan)

Stevia (I used SweetLeaf Chocolate Drops)

1 tbsp Coconut Butter

1 tbsp Unsweetened Coconut Flakes

Mix the first 3 ingredients, sweetening to desired taste. Place 1/2 the mixture in a small round plastic tupperware. Sprinkle the Coconut Butter over this layer, along with 1/2 of the Shredded Coconut. Top with the remaining chocolate mix, then sprinkle with the rest of the Coconut Flakes. Freeze to desired level (I actually like it with the center still soft).

Something New Saturday

I finally got my hands on Teeccino! I have a very serious hot beverage consumption addiction. I’ve been much better about keeping coffee minimal, but I replaced it with large amounts of tea and Pero, so I’m always happy to find a new coffee alternative. Oh and check out the mug! It’s also new. Got in 1/2 price at Pier 1 the other day :)

Teeccino is labeled ‘Mediterranean Herbal Coffee.’ It comes in all sorts of fantastic flavors, and let me tell you, this flavor, Vanilla Nut, smells fantastic! Ingredients include Carob, Barley, Chicory, Dates, Almonds, Figs & Vanilla Extract. It’s completely caffeine free, with natural nutrients and prebiotics. Tasty stuff :)

So far I like this flavor the best when mixed with decaf coffee. Vanilla Nut Teeccino + decaf Hazelnut Creme Coffee + UVAB + Sugar-Free French Vanilla Syrup = sweet delight!

FUN

I’m excited.. I have my first guest post lined up for tomorrow.. my mom! I think I’ve mentioned it before, but a couple years ago, she took up martial arts, and it has become an important part of her life (she even has a black belt!). So I asked her to share her experience with starting a new sport (or maybe I’m suppose to cal it ‘discipline’) later and life, and what it means to her.
