Red, White & Pink

First, thank you so much for your wonderful support & feedback on my last post! Sounds like a lot of you have had similar experiences with trying to balance blogging with the other stresses & responsibilities in the rest of our lives. It’s all of you guys that make me love blogging! :)

How was your Monday? Mine was pretty busy, but I was home by 5pm, so no complaints. Now if only I could stay focused on my project proposal! It’s like I have all these ideas floating around in my head but am struggling to get them organized on paper. Tomorrow I MUST be productive. So if you see me chatting too much on Twitter, tell me to ‘Get Back to Work!’

FITNESS

It’s been a pretty chill couple days. Yesterday I hit up morning Spin, then today was upper body, specifically Shoulders & Back, with my trainer. Without going into too much detail at the moment, I’m really excited about upcoming events at STS.. Tell you more about it soon!

NUTRITION

A few of my favorites from the last couple days..

Sunday Breakfast pre-Spin.. the standard White Cottage Cheese + 1/2 scoop Cake Batter Protein Powder + 1/2 tbsp Chia Seeds..

Later in the day I snacked on a few Kabocha slices topped with Protein Yogurt (1/2 c plain Greek Yogurt + 1/2 scoop PB Protein Powder)..

So the PB Protein Powder was actually a take-2, because I tried this at first..

Have you tried this? I thought it sounded so interesting that it’s sweetened with Yams.. but I thought it was awful! I tossed the whole thing out :/

New Moon Themed Out

Yes yes, we’re huge dorks :p but it’s fun! Sunday night my friend and I made a red & white themed meal for New Moon viewing..

We started with Red Sangria .. Sprinkles Red Velvet Cupcakes came later for dessert..

And snacked on Caprese Salad (forgot to take a pic, it was so pretty) and Pink Lox..

Carb Day = Kabocha & Oats

Today was Carb Day and pretty much all came in the form of Oats and Squash!

Carb Day breakfaste loving was instant Oats (I was in a rush :/) topped with 1/3 c White plain Greek Yogurt + 1/2 scoop Cake Batter Protein Powder..

I’ve been craving Kabocha like crazy the last couple days, so I fully took advantage today. I roasted slices, and this big chunk at 375 F for 30 minutes.

I sprinkled it with Cinnamon..

And ended up topping it with 1/2 c White Cottage Cheese + 1/2 scoop Cake Batter Protein Powder.. yum!

During meetings I snacked on Overnight Oats (1/3 c Oats + 1/3 c plain White Greek Yogurt + 1/3 c UVAB) and a Plain & Simple Protein Pancake pre-workout.

I made a fantastic Berry Protein Shake today. As the weather heats up I find myself craving more fruity flavors more and more. This was the perfect solution and totally fulfilled my sweet tooth..

Rich & Creamy Strawberry Shake

80 g Firm Tofu

3/4 c Frozen Strawberries

1/4 c Strawberry Kefir

1/3 c UVAB

Blend! No need to add Ice or a Gum, it’ll be super thick & creamy all by itself :)

I topped it with ~1/2 tbsp Wheat Germ..


I made one whole dinner, a good one for that matter, Quinoa + Chicken Breast + Artichoke + Sun-dried Tomato.. but by the time it was made, I just wasn’t in the mood for it anymore.. Does that ever happen to you? So I packaged it up for later in the week!

I ended up having cold wild Pink Coho Salmon with 1/2 c White Cottage Cheese + 1 tbsp Nutritional Yeast and a couple more slices of Kabocha..

Any fun foods you’re going through a phase with right now? Mine is certainly Cottage Cheese, though Kabocha took the prize today!

    good luck with your proposal. hope you are able to get it done! it is so hard to concentrate sometimes. this is prob somewhere on your blog, but what brand is your PB PP? i love wheat germ! i kinda forgot about it! hope you have a nice tuesday. get back to work!! ;)

    I’m definitely going through a green monster and cottage cheese with amazing grass superfood phase, haha. Weird combos but LOVE them. I’ve tried to find Kabocha everywhere and even at WF. Where do you get that sucker?

  7. Yummy on the sangria. May be dorky, but sounds like fun and that’s what matters most right?! I’m still digging kabocha. I have it on a salad most days with black beans and balsamic vinegar. My hubby thinks I’m crazy. I eat the whole kabocha myself. He never gets any. LOL.

  9. I love kabocha but my local store seems to have stopped carrying it – I wonder if its not in season anymore. Try it topped with hummus, so good.

    My latest obsession has been spelt English muffins, which are great topped with cottage cheese. I crave it!

  10. i Looked in my grocery store the ohter day for kabocha bc I want to make the pancakes, but I didn’t see them! I think I need to go to whole foods!!

    Love cottage cheese, I put it on everything just like you! my food phase right now is eggs! I never crave them or want them really, but I have been eating them for basically every meal!!

    I am ADDICTED to Beverly Int’l cookies and creme protein. It so good and it mixes very well with everything. Good luck on your proposal and thank you for your awesome blogs!

    I’m finally back on dairy after my cutting phase, and cottage cheese with my oatmeal in the morning is heaven. Loving butternut squash too, I just can’t get enough of that stuff, its like candy to me. Now if only I can stay out of the bags of chocolates I bought everyone for Easter…….
