Coconut Lightened Up

Thank you all so much for your kind words on my last post and all your supportive energy about Your Nourished Life. I saw my first peak at the new website on Saturday, and I love it, I’m so excited and can’t wait for you all to see it soon!

Also in good news, after spending all of yesterday in bed and on the couch, I woke up this morning feeling much better. I think my fever is pretty much gone, and although my lungs still feel heavy (don’t know how else to describe it.. sort of like there’s a weight lying on my chest), I think I’ll be good to go tomorrow.

FITNESS

ugh, not gonna lie to ya’ll, I’m feeling a little discouraged after getting behind with this sickness. In retrospect, my fever probably started Wednesday night. Thursday, my whole body hurt and I was having hot flashes, so I took it as a rest day. Friday, I lifted with my trainer in the morning, but I felt week, and cardio was just not in the cards. Turns out there was a good reason I was feeling so out of sorts, but now I’ve officially not done cardio since Wednesday, which is super bad at this point :( I know there’s nothing I could have done about it, and I would have only made myself sicker if I tried, but it is disappointing, and means it’s unlikely that I’ll see progress in my numbers come measurement time on Wednesday.

But, there are always going to be obstacles, and you just have to roll with the punches! I’m thankful to be feeling much better today, and will hopefully feel strong enough to take Boxing class tomorrow.

NUTRITION

This morning started with one of the best protein pancakes ever. Lately I’ve been drizzling a tablespoon of Lite Coconut Milk over a warm protein pancake, and it really takes it to the next level! yumm

This pancake was 1.5 scoops Cake Batter Protein Powder + 2 tbsp ground Oats + 1/2 tsp Cream of Tartar + 4 tbsp Egg Whites + Pumpkin Spice  + 1 tbsp H20, topped with 1 tbsp Lite Coconut Milk & 0-cal Maple Syrup..

I snacked on a Protein Shake made with this..

And tried to satisfy my chocolate craving with 1 container plain Chobani mixed with 1 tbsp Unsweetened Cocoa Powder.

Lunch was Scrambled Eggs (1/4 c Egg Beaters + 1/2 c Egg Whites) with Mushrooms, Salsa Fresca & a Chicken Sausage..

Sundays, when I should be studying, have become baking day. I have a few creative moments, but often I’m just inspired by all of the wonderful bloggers, and try to adapt their amazing recipes to my nutritional needs/style :p Today’s test was my version of Jessica’s, from How Sweet It Is, Whole Wheat Banana Coconut Muffins.. I adapted as follows..

Protein Pumpkin Coconut Muffins

1 1/2 cups whole wheat flour → 1 c Vanilla Protein Powder (I use Sun Warrior) + 1/2 c Whole Wheat Flour

1/2 cup sugar → Sucrant (fake sugar)

2 teaspoons baking powder

1/3 cup coconut oil

1 egg → 1/4 c Egg Beaters

2 ripe bananas, mashed → 1/2 c Pumpkin

1/4 cup coconut milk → Lite Coconut Milk

1 teaspoon vanilla extract

I baked them at 400 F for 18 minutes. This recipe has huge potential. The thing is, I’m really not a fan of Vanilla Sun Warrior. I find it super chalky and it has too many carbs and not enough protein for my uses. I have a bag to use up, so since it has carbs, I thought it might bake well. So although these muffins have great texture and pretty good flavor.. they still taste a bit too much like Sun Warrior. They are completely edible.. in fact, I put them in the freezer ASAP so I would stop myself from eating too many.. but I think they would have been fantastic using a different protein powder. Next time I’ll try with my new Vanilla Nectar Powder or even better, I bet Lean Dessert Chocolate Coconut would be amazing.

On that note, I think I forgot to mention my recent shipment from Bodybuiding.com. I was in the market for new calorie-free protein powders, so I tried 2 new flavors of Nectar, Vanilla Bean Torte and Twisted Cherry, and Muscle Gauge Rocky Road.

I haven’t tried the Nectar flavors yet, but I LOVE MG Rocky Road (after seeing all of April’s delicious looking concoctions with it, I had a funny feeling I’d like it)!

I was totally craving salad for dinner. In the mix: Baby Spinach, 4 oz Chicken Breast, ~2 oz Sweet Potato, a couple Grape Tomatoes..

Overall, a pretty tasty day.. and I haven’t even figured out dessert yet ;)

FUN

All sorts of good stuff going on over at Thinspired.. Both a Granola Giveaway (one of my all time favorite foods) and a fantastic healthy breakfast recipe!

Oh and the dress and shoes I was wearing in the last post were both from Macy’s and the shoes where\ by Guess.

All right, I really have to force myself to practice this week’s presentations.. it’s so close to being done, eeck! :)

    You have to try the BioX Power Whey Isolates (Cookies and Cream, Chocolate, Chocolate Peanut Butter, Van, Strawberry Banana)! I know you are sick of me going on and on about these- but you can get them on BodyBuilding.com too!!! Their complex’s taste great as well, but the Isolates are TO DIE FOR!!! You should feel so proud of yourself for having the strength and determination to go to the gym when you weren’t feeling 100%!! Change your perspective! Other people would get side railed and totally give up! Instead, you got to the gym and worked out, despite being weakened!!! That is amazing!!! Your body was probably trying to tell you something- it needed rest! Make sure you get sleep and realize what a feet you achieved! Proud of you!!

    I know how frustrating it can be. Feeling mentally fit and ready for your run / boxing class but physically not being able to. I hate that feeling. Our bodies unfortunately can break really easily and if we don’t look after them, they will tell us all about it later. I’m glad you listened, you will do great, don’t worry. Your diet is perfect and you will kick some cardio butt once you feel better.
    Good luck with all of your presentations! I’m sure they will go well!

  7. Glad you’re feeling better. Just don’t push too hard on the cardio if the cold (or whatever it was) has gotten into your chest. I love your creativity in baking with the protein powders!

    Get well soon!! From another weight-lifting lover to another, I know how it feels to want to work out and not be able to! Just remember everything happens for a reason!!

    You’ve got me craving chicken sausage now! LOL. And I’m so glad you like the rocky road.. my favorite way to use it is mixed in cottage cheese with a sprinkle of extra stevia (I have a major sweet tooth!)

    I really need to try some coconut milk on top of some pancakes, I never would have thought of that! have you ever baked anything with coconut flour? I heard its low carb, but haven’t looked at the stats yet…
