Tasty Procrastinating

Hi everyone! As usual, you do nothing but make my heart melt with your amazing & supportive responses to my last post. Thank you, thank you, thank you!

So, how was your weekend? I seriously can’t complain. Yesterday’s pool party was a blast (thanks again for hosting Amanda & Jess)! And the Chocolate Chip Blondies and Hummus disappeared quickly, so they must have been a hit too!

Unfortunately, I owe a huge apology to my stomach, that would go something like this: Dear Stomach, I am so sorry for reintroducing you to toxic beverages and greasy snacks that you thought were things of the past. I promise the worst is behind, and I will not do that to you again for a long time. So could you please stop hurting now. With love and thanks! :p

I have one more final (perhaps ever.. crazy!) tomorrow, so naturally as I was suppose to be reviewing materials.. I got creative in the kitchen. And with huge success!

This first recipe was inspired by something I saw at HEAB. My dad makes a killer Beef Straganoff, but you could never call it healthy. But this actually came out really well!

Healthy Turkey Stroganoff

1 can Cream of Mushroom Soup

Mushrooms (amount & variety depends on your taste, I used Baby Portobellos)

6 oz plain Greek Yogurt

1 tsp Xanthan Gum

Extra Lean Ground Turkey

Noodle Substitute: Spaghetti Squash or Shirataki

Heat soup in a saucepan. Saute Mushrooms in a medium skillet, when finished, mix in with Soup. While stirring constantly, mix in Greek Yogurt and Xanthan Gum. In a large skillet cook Ground Turkey over medium heat. Pour Soup mixture over Turkey and mix together. Eat plain or mix with your favorite low-carb/calorie noodles.

I went with Spaghetti Squash..

This next one would have been more appropriate to post on Cinco de Mayo, but I just so happened to have the ingredients lying around today.

Artichokamole

6 oz Artichoke Hearts

1 ripe Avocado

~2 tbsp fresh Salsa Fresca

splash of Lemon Juice

Blend everything together in a food processor. Use as a healthy substitute for Guacamole, serve with pita chips, spread on a wrap, etc.

And finally, I’ve seen all these tasty looking Banana “Soft Serve” recipes floating around, but my severe disdain for the smell of Bananas prevents me from ever trying them. But I thought another frozen fruit might work. And so was created..

Tropical Soft Serve Ice Milk

1/2 c frozen Pineapple cubes

1/4 c Lite Coconut Milk

1/2 c Unsweetened Vanilla Almond Breeze

2 tbsp Sugar-Free Lemon Syrup

1 tbsp Sugar-Free Coconut Syrup

2 Ice Cubes

Unsweetened Shredded Coconut

Dumb everything into a blender. Blend blend blend (you’ll have to shake a stir a few times). Sprinkle Coconut Shreds over finished product.

This is so delicious and refreshing!

    Hope your last final goes well! I used to clean to procrastinate whenever I needed to study. I’d be up in the wee hours of the morning finishing up a paper, but my apartment sparkled! ;)

  6. I hear you on stomach apologies. My husband and I went to a movie yesterday and I indulged in a soda, popcorn, and Peanut M&M’s. Barf. I don’t know how people can eat those things regularly. Hope you had a great weekend!

    Oooh, I like that artichokamole. I can’t do a lot of avocado, but cutting it with artichokes may work!

    Eehhh, your tummy will get over it ;)

    Your turkey stroganoff is a brilliant idea and looks delish! Is there any substitute I can use to Xanthum Gum? Is it necessary to use a thickener? I don’t have any XG on hand and I don’t want to simple use flour. Thank you!
