Path to Health
If you’ve been blogging or a reader for awhile, you know there’s a bit of a hierarchy in this strange not-so-little world. I read many of the “big” healthy living blogs, some I see why they’re so big more than others… but what I love about all blogs, is that I learn something from everyone!
I love this blog because I have huge respect for how open & honest she is about her journey to the healthy place she is in now, and even more so, I admire & empathize with the commitment, hard work and passion required to take the road less traveled, follow your heart and start your own business. And besides all of that, she has awesome recipes, and you can tell how much she really does love blogging, and where she is in life.. can you guess.. yes, I’m talking about Angela over at Oh She Glows

I randomly came across this blog when I first discovered the fitness-niche of the healthy blogging world. Naturally one of my first clicks was the ‘about me’ section and turns out she was from Arizona, competed in bikini.. and we went to the same school
I love Fit Lizzio’s Blog because you won’t find anyone more sincerely passionate about working out, and she is open and honest about what a crazy roller coaster competing can be.
FITNESS
Today was my push-through-it, not particularly fun workout day.. or in other words, Arms & Steady State Cardio :p I did 10 min. on the Treadmill and 35 minutes on the Elliptical (going from resistance 6-10, increasing each minute, then back down to 6, and repeat). Arms were the usual various curls & extension. But tomorrow’s Shoulders & Back + Kickboxing!
NUTRITION
The last couple days I didn’t have much of an appetite, but it was back today, and I was a bottomless pit!
My day started early, around 5:30am (early for me :p) with Protein Pancakes. These came out better tasting & looking, but I’m still working on the best mix with the new powder…
Post-workout I had a.. hmm.. what to call it.. Nutra-bran Frittata?.. I mixed 1/2 c Egg Whites with 2 tbsp Wheat Bran and 1 tbsp Nutritional Yeast, cooked it like a Frittata, and topped it with 1/3 c Cottage Cheese & a couple tbsp of Artichokamole (not very attractive.. but yet again, tasty!)..
Lunch was leftover Eggplant Tofu Casserole, that was eaten, un-pictured, straight from the tupperware. And later I made HEAB style Protein Ice Cream using 1 scoop Muscle Gauge Ice Cream Sandwich flavor and 1/2 tbsp Matcha Green Tea Power. This was good, but even though the gums make it light & fluffy, I definitely prefer the smooth & creamy Ice Cream Maker version!
Sweet Potatoes 3 Ways
This was an impromptu creation. I haven’t been particularly creative with Sweet Potatoes.. so this is new to me! I sliced up a small Sweet Potato into rounds, then lightly sprayed each side with Coconut Oil. 1/3 were sprinkled with ground Flax Seed (on both sides), 1/3 were sprinkled with Cinnamon + baking Stevia (Stevia in the Raw), and 1/3 I left plain. Baked them for 25 min. at 450 F, flipping after 15 minutes… and there we have it.. savory, sweet and traditional
Pleasantly Surprised
I’ve managed to avoid Cabbage. I think I associate it with old elementary school lunchroom food, and for some reason the word ‘coleslaw’ just turns me off.. but I figured I should probably give it a shot. So tonight I had my first cabbage experience, and I am SO pleasantly surprised! I just heated 4 oz sliced Mushrooms, then added 8 oz Red Cabbage and sodium-free Garlic & Herb Seasoning. And for protein I topped it with a lovely piece of grilled Wild Alaskan Salmon..
Revamped
Dessert was a version of this weekend’s Luscious Lemon Cupcakes. These are the single serving chocolate version..
Chocolate Protein Cupcakes
1 scoop Chocolate Protein Powder
1 tbsp raw Cacao Powder
2 tbsp Egg Whites
2 tbsp plain Greek Yogurt
2 Stevia packets
1/2 tsp Baking Powder
1 tsp – 1 tbsp Coconut Oil
Mix everything. Bake at 350 F for 22 minutes. Made 3 full-sized cupcakes.
Chocolatey goodness!..

Yes.. I didn't put it on the main post, because I keep tweaking the recipe.. but for exactly what I made last night the batch (for 3 cupcakes) had 183 calories, 5.2 g F, 5.7 g C, and 31 g P. I'm a dork and love getting to eat all 3 of them, and sort of feel like I'm indulging, but I'm not!
Thanks for the shout out!!! I always feel like I repeat myself too LOL. I'd love to meet up and cook for you one day as long as you cooked something for me too! Oh, and we would have to do a kickboxing class together as well

Yummers for those cupcakes! have you seen my eggplant tiramisu? I had some last night and thought of you! I love napa cabbage and its really nice raw or cooked and its lower in carbs than other cabbages. I like it with thined out peanut butter (thined out with lemon juice, lime juice and mustard)
