If Monday’s blog title was ‘Good Day,’ today was flipped up side down… we all have them.. I think I’m usually a pretty positive person anyway, and I try not to be negative on the blog, but I also want to be honest.. and honestly.. today’s was crap, haha, not funny, but sometimes you just have to laugh.. it was one of those days where everything seems to go wrong. I won’t bother you with the details, but sufice to say I’m happy to have this day behind me.. and to start new tomorrow!
On the positive side.. Figure competition-prep measurements went down slightly AND it was carb day! woot woot
FITNESS
Today was Arms and what ended up being plain old SS cardio, on inclined treadmill. I really wanted to get cardio done early so I could get to Yoga, but the events of the day messed up my schedule and I ended up settling for cardio at my complex’s gym. I hadn’t worked out there before because it’s just pretty ‘blah’ but ya gotta do what ya gotta do!
Tomorrow, on the other hand, will be great.. I’m determined. It’ll be Shoulders & Back, HIIT Cardio, then Poolside-Sunset Yoga at a gorgeous Scottsdale resort that overlooks Camelback Mountain! They have these events every month or so but I haven’t been able to make it yet.. and of course with it being Arizona in July, it’s automatically hot yoga. Yay for carbs
Pre-workout I just had a usual Protein Pancake, which went un-pictured because my camera battery died.
But I was ready for Oats after! I give you PB & Chocolate Yoats: 1/3 c Coach’s Steel Cut Oats + 2 tbsp Oat Bran cooked in 1.25 c H20, stirred in 2 tbsp Sugar-Free Peanut Butter Syrup, then topped it with plain Greek Yogurt that I’d mixed with 1 tbsp Special Dark Cocoa Powder & Stevia..
It’s crazy, my body is definitely adjusting to the diet, and on high-carb days my metabolism just kills it! I ate this giant bowl of oatmeal, was comfortably full for about 45 min. then was ready to eat again. A month ago I would have eaten this and would have been full for hours. The other noticeable thing is when I eat more carbs I feel noticeably hotter within 10 min. It’s funny how much more aware I feel with regards to how my body’s responding to food… moving on to more carb-tastic tastiness..
Lunch was Cinnamon Sweet Potato Bites with a PB Protein Ice Cream Sundae (yes, I’m satisfying my nut butter obsession through purely chemical means)..
For dinner I tried another one of the Tasty Bites Indian Entrees. This time I went with Jodphur Lentils and added Cod and a bit of Hummus (sorry for the messy look, it exploded a bit in the microwave)..
This was good, but I like the Madras spices better.
I also snacked on Baked Oatmeal Bites. I used a recipe from Recipes for Gals in Figure and Bodybuilding for Baked Oatmeal and just cooked it in muffin tins..
Blueberry Coconut Oatmeal Bites
1/2 c Oats
3/4 c H20
2 tbsp Sugar-Free Coconut Syrup
1/2 tsp Baking Powder
Stevia to taste
Cinnamon to taste
1/3 c fresh Blueberries
Mix everything together. Let sit for 5 minutes. Pour into muffin tins and bake at 350 F for 35 min.
This was pretty good! I love baked goods with Blueberries, even though I actually don’t like the texture of Blueberries alone. Any who.. after taking the above picture, I drizzled it with a bit of Unsweetened Almond Breeze.. that made even better
Preppin
I also did a little food prep for the next food days including roasted Chicken Breast, Diet Spinach Bars and Protein Waffles (same as the pancake recipe.. these worked much better not adding any H20)..
For dessert I whipped up a Berry Tofu Pudding. The flavor on this wasn’t particularly strong, but it was still sweet & good. I’m just totally diggin’ the texture of this protein. I only ate a few spoonfuls, but think it’ll be perfect as a protein pancake topping tomorrow!
Berry Tofu Pudding
1 12 oz package of Mori-nu Silken Lite Firm Tofu
~1/2 c frozen Strawberries
1 tsp Vanilla Extract
Stevia to taste
Blend everything in a food processor until smooth. Chill for an hour.
FUN
I’m just happy we’re over the hump, and I get a little Yoga in my life tomorrow.

Sometimes, the best thing to do on those days when everything goes wrong (I tend to drop EVERYTHING, spill EVERYTHING, run in to things, etc…) I just have to LAUGH at what I'm doing, even if it's the most minor little thing (for example, the coffee that just boiled over in the microwave that just made a MESS). I know it's not always easy to just say "whatever" but it does help! Anyway, I always brace myself after "good" days to have a bad one, I just know it's coming when it seems like everything is going my way!! LOL
Your eats look really good–I'm going to make the blueberry bites, I have everything to do it. Oh and as for texture of blueberries–have you ever just slow simmered them with a little bit of stevia? They turn in to the texture of pie filling and are SO GOOD. I have the same issue when I eat them on their own. Eek!

I've started doing all my fruit that way, it's awesome w/ cottage cheese.
I've tried the baked oatmeal in a baking pan before and I wasn't really happy with the soft texture. I've also never found a granola (made w/out oil) that is crunchy or clumpy enough for me.

I took some left over baked oatmeal and crumbled it up in tiny granola-size clusters. Then I laid it on foil on a baking sheet and threw it in the oven during the last few minutes of baking my kabocha @ 375 (i started reading your blog b/c i saw your addiction to kabocha and i've been addicted for YEARS!!!
End result was crunchy and delicious!

I love that! haha.. my childhood best friend turned me onto kabocha when I was out visiting her in San Francisco last year. I think my reaction upon trying it for the first time was "how have I not known about this!"
Girl I hear you on the down days. I had 2 in a row. I agree with you about wanting to stay positive but also being honest about it. It shows you're human. Oh and I totally missed that you had tried making seitan.

Ugh.. lets meet somewhere in the middle of our 2 homes and have a drink.. or maybe a protein shake :p .. yeah I made seitan a few weeks back and it turned out really good! I think it's definitely on my menu for a high-carb day coming up!
about the chemical nut butter obsession, I guess you gotta do what you can to satisfy it because its a tricky one! Hopefully you'll be able to indulge in the real thing after the shows.
I make that same tofu pudding almost everyday, usually with chocolate, but sometimes I'll do a fruit version with crystal light.

Nut butters are a funny thing for me.. in theory they're fine for me to eat most of the time, even early on in prepping for a show, the problem is personal.. as in I can't only eat 1 tbsp.. I think it might be impossible haha

haha i love how you are curing your PB cravings with the SF stuff! i have SF syrup and im doing the same thing! do you use the capella drops? I have gotten a few of those and I geuss I didn’t get great flavors because they were pretty gnarly!!

Yeah I have mixed feels about the Capella Drops.. I'm loving them in my protein ice creams.. but have mixed them in with other stuff (esp. oats) and thought it was awful.. just tasted like chemicals. So far I really like the Peanut Butter and the Pralines & Cream
