Zucchini Bran Muffins

The other morning I woke up completely craving Zucchini Muffins. I must have seen them on a blog, or it was from slicing zucchini’s for the restaurant’s zucchini water.. but either way, fortunately there was an easy remedy. As always, I scoured my recipe database, cookbooks and blog world, and mashed together a bunch of different recipes. The result: moist healthy Zucchini Muffins!

Zucchini Bran Muffins

1/2 c Spelt Flour

1/2 c Oat Bran

1/2 tsp Cinnamon

1/4 tsp Baking Soda

dash Salt

2 tbsp Hemp Seed Oil (or your favorite baking oil.. Coconut would be fantastic!)

1/3 c Stevia in the Raw

1/3 c Greek Yogurt, non-fat, plain

1/3 c Egg Whites

1 c Zucchini, finely grated

Optional add-ins: Shredded Coconut, Nuts

In a bowl, mix together Flour, Bran, Cinnamon, Baking Soda and Salt. In a seperate bowl, stir together Oil and Sugar, then add in Yogurt and Egg Whites. Fold in Zucchini. Stir together dry & wet ingredients until just blended. Spoon into muffin tins (sprayed with cooking spray or use wrappers) and bake at 375 F for 25 min. Makes 12 muffins.

In my version I added Coconut to half of them, and it was a perfect compliment.

Breakfast became a couple muffins with Yogurt & Berries..

    Yummy!! I love zucchini bread/muffins. For some reason I hardly ever add oil to my muffins.. does it make a big difference?
