Mission: Chewy Granola

Ugh, what a day! I had a lovely day of working out and catching up on work planned. Then this happened..

I was told this is the “Blue Screen of Death” and I might as well throw it in the dumpster..

It is exactly 8 days since my IT warranty expired.. ugh, funny how that works.. grr  :twisted:

So instead my day was spent buying a new computer, getting everything set up and realizing that my last backup didn’t go all the way through and I lost a ton of files. So now the marathon begins of going through emails for the last 3 months to recover everything I possibly can. bleh

For the glass-half-full perspective, I do have a gorgeous new Mac and will never ever ever purchase a PC again! (I never planned to until my grad program made us..).

NUTRITION

I think I’ve mentioned before, but one of my all time favorite meals is a Yogurt Parfait with Greek or Goat’s Milk Yogurt, fresh Berries.. and perfect granola…

Many people like their granola crisp & crunchy.. not me. I like it chewy with a bit of crunch in the form of nuts & seeds (I also like brownies & cookies, just barely cooked.. ok fine, basically just past raw :lol:). So Sunday when I was in the mood to do a little baking, I checked 0ut what was left in the cupboards, and did a little research online. Turns out the trick to getting chewy granola is adding 1/2 cup or so of flour. Yummy Supper’s recipe inspired the following .. Coconut, Craisin & Chia Granola.

CCC Granola

1 c Oats

1 c Barley Flakes

1/2 c Whole Wheat Flour

1/4 c Chia Seeds

1 c Pecans, chopped

1 c Unsweetened Coconut, shredded

3/4 c Craisins

1 tsp Vanilla Extract

2 tbsp Coconut Oil

1/4 c Maple Syrup

Preheat oven to 250 F. Mix all dry ingredients together. Stir in Vanilla, Maple Syrup and Coconut Oil. Spread a thick layer out on a greased cooking sheet. Bake for 20 min. Loosely stir with a spatula but don’t break up the pieces too much. Bake 20 more minutes. Depending on your oven, it may be done at this time, or could use another 10-20 minutes.

My favorite way to eat granola.. with Yogurt (Goat’s Milk is my new love) and Strawberries!

Back to file recovery.. and perhaps another bowl of granola & yogurt..

    What a effing day you had…computer issues, backup issues, money being spent you never planned on..and you cooked. Granola. I would have headed straight for the double shot of cuervo!! holy sh*t. HANG IN THERE!!!! Omg.

    I will tell you this, and i am posting this in the a.m. computer breakdowns are notorious during a full moon, and it's a full moon tomorrow

  2. Ugh, don't you just love technology sometimes? I guess my worst story was spilling a full glass of wine on my laptop and frying it. I lost all of my music and any photos on the computer. Not cool at all. New rule: no wine glasses near the laptops. ;-) I am torn between crunchy granola and a softer one. I love the Kashi Toasted Berry Crumble b/c it's sort of a compromise on not too crunchy and not too soft.

    AH omg my compute rin college, I basically beat up on it so so much! not only did I get blue screen so often, I once spilled a vodka shot on my key board (ahem-twice-ahem) and I had to get it replaced….man that computer went through so much! LOL

    that granola is making me CRAVE that crunchy and cool combo!

    ugh doesn't that ALWAYS happen. that exactly when you're warranty is up or when whatever else happens that is the exact moment you actually need it! i feel like that happens a lot with my phone hahaha

    great granola recipe! i'm the same way i like things chewy yet with a slight crunch factor! but pretty much anything that can be eaten with a spoon i'm down for haha

    I think your computer is repairable so don't throw it out if you don't have to. Maybe you can donate it to someone / some organization? Or just format the HDD and give away on craigslist or something?

    Sorry to hear about your computer, but I'm such a fna of Macs so I like your "glass is half full" perspective! When my Mac died (well, the hard drive) I decided to A) get a new hard drive, and B) buy a Mac for the desktop!! haha, not necessary, but two Macs are always better than one! My work is making me use a PC now, ugh. But I always use the Mac at home.
