Hi all! Wow, today flew by for me! I woke up this morning in a great mood.. it’s amazing how quick everything shifts after a good workout (& enough fuel/food). I didn’t get a workout in today due to running errands (crossing my fingers that reliable internet will result) and getting together with a friend this evening. Ah well, yesterday’s workout left me a great sore, and tomorrow I’m planning to work legs and get in a bit of cardio.

Of course it had to be Pancakes. I used Heather’s recipe except I only used 1/4 c Oats and added 2 tbsp Cake Batter Protein Powder. I think I had the heat a little high because they burnt a bit before cooking all the way through, but still good. I topped them with PB Flour Syrup (2 tbsp PB Flour + 2 tbsp Walden Farms Maple Syrup)..
How Much is Right: Serving Size Quandary
I caught myself getting obsessive recently, and had to remind myself to chill out. I was following a recipe, and was initially alarmed that it didn’t say the number of servings.. ‘what! how do I know how much I’m suppose to eat?’. Then I caught myself.. why do I need a recipe to tell me how much to eat? The recipe is completely healthy, there’s no reason to restrict.. just eat until I’m full.
I know it must seem crazy to some people that I had to remind myself of that, but I think it’s just one of those things funny side effects of eating so specifically for so long. Both my competition prep diet and “building” diet were based on numbers.. getting just the right amount of protein, carbs & fat.. not too little and hopefully not too much.. the result, now that I’m just aiming to be healthy, is that I sometime still forget to just listen to my body and not a box or recipe to tell me how much to eat. Mindful eating is certainly a learned process at first.. but this is a step!
Panini Love
I’ve been obsessed with Paninis lately. Over the last week, I’ve made a few slightly different versions of the same basic sandwich. I don’t know about you, but in my opinion, take any ordinary sandwich, stick it on a panini press (or George Foreman Grill in my case) and it instantly becomes 10x more amazing. But up until now, I had yet to make my own panini as good as what I’ve had a restaurants.. I’m declaring that time has come to an end, because this one is better than most I’ve had ![]()
Deli Pesto Panini
1 Roll (soft & fluffy)
Kale Pesto
2-3 Kale Leaves, broken into pieces
2 tbsp Parmesan
1 tbsp Olive Oil
2 tbsp Pinenuts
1 Garlic clove
Sandwich
Deli Meat (Turkey, Ham or Vegetarian substitute)
Goat Cheese
Gouda Cheese
Avocado
Tomato
Spread Kale Pesto on one side. Layer Deli Meat, Tomato, Avocado & Cheese. Grill. <3
A Turkey version on Ciabata..
Ham version on a Whole Wheat Roll (with added Spinach)..
Dinner was from Nourish. The Lemon Hummus with Pita, then I added Tempeh to complete the meal..

What’s your all time favorite sandwich?
I love this steak tartarr sandwich I always get when I go to Belgium to visit my grandmother! Gahh its so good! Steak tartare on a whole grain baguette with onions! I'm such a carnivore! Your pancakes do like a little, scorched, I sometime like things a little burnt, I know its bad for me, but most things we like are.
Fave sammie? Hmmmm…..I just am not a sammy girl. Never was, never will be. Except when I was pregnant. I ate huge veggie sammies with like a half of a jar of vegan mayo on them LOL. and tons of mustard too.
loved what you had to say about mindful eating and not freaking/restricting b/c you KNOW everything is healthy, just eat to a comfy full place. totally on point!

Mmmm panini! Looks so so good. I don't really love sandwiches…. I'd have to say grilled cheese. Hahahah.

At the restaurant I started working at they have a Pork Tenderloin Grilled Cheese that you can get with Sweet Potato Tater Tots.. I love it! Totally a grown up version of a childhood meal.. but I would love the kid's version too :p
I know what you mean about serving sizes! And for me I always try to choose recipes that have a big serving size so I know I'll be full… silly I know!

you are SO right about the serving size thing (while it doesnt apply to me right now because I am counting servings and measuring and blah blah but you more than anyone understands that) BUT besides that, just eat until you feel satisfied! this is the most amazing outlook and so true! i am so glad you wrote this!

favorite kind of sandiwhc for me would be something that is grilled for sure! either a wrap or crusty bread that has nice grill marks-cheese oozing out the sides, turkey (fresh!) roasted red peppers, lettuce, grainy mustard and tomatoes (I used to make that wrap at a local bakery where I went to college, it was incredible!)

I am having the same problems with serving sizes. But, my problem is that I am eating too much and not listening to when I am full. I have had an eating disorder in the past and restricted so much. Then, I got better for a while. Then, I started to count macros and get obsessed. I have decided to stop counting macros and just trying to eat balanced meals. I am also trying to cut out added sugars and most processed things that are not too healthy. It's so hard for me sometimes. I get so mad at myself. I need some advice on intuitively eating and listening to hunger cues and not overeating, choosing healthy options, etc. I ate too much for breakfast this morning and could have skipped out on the french toast because I was full before eating it and honestly, it wasn't that good. At lunch I will try to be better.
Sorry for this. I am just trying to reach out to people because I need help with this. And, I know that you go through some of the same problems sometimes. Thank you, though, for listening.

No worries Katie! I totally understand where you are coming from and have been there. Reading and doing the (sometimes silly) mindful & intuitive eating exercises has helped me a lot. Habits can be hard to break and it's easy for our minds to try to trick us. Each meal/day may not go exactly how'd you like, but as long as you're aware of it and do your best to make a change the next time, then little by little I bet it'll get better and those old habits will go away

I think my fave sandwich combo is pesto (or just fresh basil does me fine), thinly sliced tomatoes, artichokes, fresh spinach, roasted red bell peppers, and provolone grilled up. Hope you're having a great week!

Super melted grilled cheese (gruyere, swiss, something strong) with tomato on thick, buttered whole grain bread. With a bowl of soup. Definitely comfort food!
I used to freak if the recipe didn't list macros. If it just listed number of servings I wouldn't give the recipe a try. With raw food, I feel so much more able to self-regulate and listen to my body
My fave sandwich and its gotta be a cheat meal would be a Monte Cristo. Ham, turkey and havarti cheese on bread all dipped in egg (french toast style), pan fried and served with strawberry jam….mmmm…I'm sure there could be a healthier version to be made of that.
