As you all know by now, Mexican food is my weakness. I love cheese, guacamole, fried chips.. the works! Fortunately there are all sorts of healthy substitutes for many mexican dishes, but there’s one I haven’ t touched on yet.. dessert! Fried Ice Cream has been a special-treat dessert for as long as I can remember.. so naturally a healthy version creation was needed!
Chocolate Faux-Freid Ice Cream
1 scoop healthy “Ice Cream” (I used my Protein Almond Milk Ice Cream, but any store bought low-fat frozen yogurt or ice cream works)
Chocolate Sauce
1 tbsp Coconut Oil
2 tbsp Unsweetened Cocoa Powder (I used Hershey’s Special Dark)
Stevia, to taste
Crunchy Layer
2 tbsp Stevia in the Raw
1 tbsp Cinnamon
1/4 c Uncle Sam’s Cereal (or another healthy, whole grain option)
Topping
0-calorie Maple Syrup
Optional: more Cinnamon, Whipped Cream, Chocolate Sauce, etc
Scoop Ice Cream scoop onto a tray and return to freezer. Mix up Chocolate Sauce by combining all ingredients (it will be thin, but will harden like Magic Shell on the Ice Cream). Mix Crunchy Layer by combining all ingredients. Remove Ice Cream from the freezer and roll in the Chocolate Sauce. Immediately roll in Crunchy Layer mixture. Top with Maple Syrup and any other delightful topping!

I forgot to mention, I am WORKING on the ultimate goal: Recreating the AMAZING Goodie Rings! Just thinking of them makes me drool! I've got the 'taste' part down, but it's the texture. I think I'll just leave it in the 'dough' form! Whoever came up with them should win a Nobel prize!
