99%

I cannot believe that only one week ago I was living in Scottsdale, not a box packed, and going to my last Yoga classes at my studio there.. seriously, I feel like I switched lives overnight! Yesterday was one crazy no stop moving extravaganza. I hate living out of suitcases (unless I’m traveling someplace fantastic), and just like having my creature comforts (ok fine.. my iced coffee with Almond Milk and Pumpkin Oatmeal), so I’d just rather get all the moving and unpacking done as fast as possible.

Yesterday morning I picked up the keys to my new place and got to unpacking the Uhaul. What a workout! Which is good because I haven’t been to an actual gym in a week (and unfortunately didn’t go today, because my back is feeling pretty unhappy after lifting & moving a couple things I probably shouldn’t.. but I think it just needs a day of rest). I was able to unload and move everything but a couple big heavy items, and by 9pm I declared I was 92% moved in ;-) .

I little reverse-HH action at Kona was in order, and I celebrated my moving accomplishments with a drink from their Skinny menu. I went with the Skiwi Kiss and was really impressed; it was sweet but still refreshing. I also pulled my usual, take an item on the menu, completely deconstruct it and create my own to make it healthier.. it ended up being a Spinach Salad with grilled Chicken, Strawberries, Cashews and Dressing on the side.. simple.. but still one of my favorites. I was a bad blogger and didn’t take pictures (exhaustion & effects of the Skiwi Kiss had set in..) but I’m quite certain there will be many more opportunities :smile:

Then I woke up at 5:30am this morning and couldn’t fall back asleep because I was thinking about how unorganized and messy my new home was (excessively A-type, left-brained much?!), so I decided I might as well get up and finish the project. But first I required a tasty, Angela-inspired (due to the breakfast in a parfait glass nature) breakfast.

I layered Pumpkin with Greek Yogurt (plain + vanilla extract + stevia) and Kashi Go Lean Crunch..

The rest of the day was filled with more unpacking & organizing, and running errands.. including multiple trips to the grocery store. I am happy to say I’m now stocked up on Libby’s Pumpkin (finally!) , Sugar-Free Pumpkin Pie Syrup (yay World Market), and a few fun items from Whole Foods, including Arctic Zero and this..

I’d seen We Can’t Say It’s Cheese on another blog at some point, and when I stumbled on it at WF’s today, decided it deserved a try.. and so glad I did! I just tried a little bit with Chicken Breast but eeck, it tastes just like Queso! And the nutrition facts aren’t too shabby either.

As of right now, I’d say I’m 99% settled.. there are a few boxes lying around until I get a new bookshelf or two.

Tomorrow I’m starting my tour of local Yoga studios.. I’m excited, but know it’ll be a rough one after a week off.. ahh well, have to brush off the dust sometime!

  2. Oh that parfait looks great. YUM. I am sooo with you on getting unpacked and settled ASAP. Anytime I've moved, I've pulled near-all nighters unpacking and organizing everything just as it should be.

    Ive wondered about that dip…glad to hear it's good! So i take it you are loving Austin so far? Many ppl always tell me I should move there, must be a great place!:)

    Glad you are adjusting to the area well! We are supposed to have seasonably appropriate weather next week, which is SUPER exciting!

    Hmm, maybe i'll have to try that cheese stuff. I usually shop at Sprouts, but I may have to venture over to WF for some new stuff.

    They carry artic zero at whole foods? I’ve only ever seen it at sprouts!

    I think they’re releasing a pumpkin flavor on the 29th!!!

    yay so glad you are all moved in and somewhat settled! everything will be so back to 100% normal in no time!! that 'no cheese' dip looks interesting! i thought it was peanut butter at first lol, eiter way it looks good!!
