Dehydrator Success & Treadmill Climbing

Hi all! Hope your week is off to a good start. All I have to say is.. wow.. the weather in Austin today was absolutely amazing! On top of that I actually had a really productive day, got in cardio and a light full body workout, and tried a new Yoga class.

And in other new.. looks like I’ll be starting a new job soon :lol:.. more details later this week!

FITNESS

Slowly getting back in the groove..

I started today with a little Treadmill work..

I followed that with a random full-body workout. Random in that I didn’t plan it out in advance, but instead just went with what I felt like. It involved Glute Kickbacks, Lat Raises, Shoulder Presses, Tricep Extensions, Smith Squats, and SB Hamstring Curls.

Later in the evening I tried another new yoga class (Hot Vinyasa) at a place that had been recommended by a few people, Yoga Vida. I really liked the studio, and what the teacher was saying, but the class itself was must more mild than what I like. I’ve heard great things about this place so I’m going to try a couple different teachers this week while I take advantage of their new student pass.. I’ll letcha know how it goes.

NUTRITION

Sunday I made a mistake.. I went to the king of Whole Foods.. the gigantic, has everything you can imagine, flagship store. The mistake of course only being that I probably didn’t need most of what I purchased, including..

I’ve been wanting to try these flavors but hadn’t wanted to shell out the $ and well.. frankly I probably should be trusted with a full jar..

I also purchased fresh Figs, but didn’t like the texture. I know I like dried Figs so it gave me a good excuse to whip out my Dehydrator that has been neglected.

Then last nigh, while catching up on my Reader, t I saw Lindsay’s PB Banana Chia Chips and was inspired to make a Pumpkin Version! I used the same recipe, but instead of Banana, used a little over 1/2 cup of Pumpkin. um wow! These turned out soooo good! My first dehydrator experience was a big failure, but now I’m excited to experiment more.

Meals

I haven’t really been in the mood for oatmeal lately, but this morning nothing sounded better than Pumpkin Oatmeal. I cooked up 1/3 c Coach’s Steel Cut Oats, mixed in 1/3 c Pumpkin, 1 tsp Vanilla Extract & a bunch of Pumpkin Spice, then topped it with raw Pecan Butter, a little bit of Pumpkin Butter and a bit of Goat’s Milk Yogurt..


I didn’t feel over-full at the time, but this bowl held me over until late afternoon. It’s amazing the difference adding a bit of healthy fat makes to!

Loved this dinner tonight! I just mixed together the following and microwaved for 2 minutes, stirring half-way through: Spaghetti Squash, chopped Baby Spinach, Roma Tomato, Daiya Cheddar, FF Feta & Chicken Apple Sausage..

FUN

On Sunday I stopped by the Pecan Street Festival. There were mostly arts & crafts booths..

And a couple food booths. Some healthy..

Some not so much..

I was a little disappointed in the festival just because they had advertised a “health” section, which really ended up just being a couple booths. Ahh well, it was good to get out and wander around a bit.

I would love to hear your favorite dehydrator recipes! My 1st attempt was a macaroon recipe, but it didn’t work out. Any suggestions?

    great treadmill workout! your feed doesnt appear in my reader anymore :( i thought you just weren't updating for some reason. i wonder what's up! i will try to unsubscribe and resubscribe. i love the look though. glad you commented tonight so i could click on over and realize there is a glitch! the pumpkin in the mac surprised me, too, but it was GOOD! it also added nice color :) i have a dehydrator and can't wait to dry out some tomatoes. my fave. xo!

    Love the dehydrator! You think its worth buying one? I'm on the fence about it since I'm not sure I'll ever end up using it.

    Oh…you know I love treadmil workouts!!! I'll be doing this one soon :)

    I'm a cook in 5 minutes girl so i'm not sure i'd have the patience for a dehydrator ;)

    yea, now I must try the pumpkin version! Oh and I bought those packets too at WF, SO GOOD but not on the wallet!

  5. I've not really done much with dehydrating anything other than too many tomatoes at the end of the season. And I'm sooo with you on not being able to control myself with the nut butters. Love those packages.

    I don’t have a dehydrator but have been considering buying one so that I can make raw foods. I also have spaghetti squash all shredded up in my fridge that I’m going to eat for dinner. I just need ideas for a healthy protein and fat to add to top it off… Any ideas?

      For proteins you can use anything you'd use for regular spaghetti: chicken, fish, tofu, seitan. Or mix up a nutritional yeast pasta sauce (nutritional yeast + hummus + H20). For a healthy fat perhaps add avocado or nuts.. yum.. thing I just accidentally planned dinner tonight, hehe

    ohh that is so fun with the dehydrator! I wish I knew how to use one/had one, they look superfun to use!!

    too bad about the lack of health booths at the festival but still looks fun!!
