Killer Combos

I can hardly believe tomorrow’s Friday, this week flew by. And thank you so much for your sweet comments on yesterdays post! It really is just a part of my learning process and journey to being a healthier version of me.. but it’s wonderful to be able to document it here and have your support. <3 you all!

FITNESS

Just plain old Cardio today. I’d planned to go to Yoga in the afternoon, but my appetite after fasted cardio (not purposeful, just wasn’t hungry first thing this morning) got the best of me. Today I just did 20 min on the treadmill, mostly a brisk walk (~4.0) at an incline (9%), then 20 min Elliptical Intervals. The weather’s been so nice, there’s really no excuse for not running outside. So I checked out a couple loops around my neighborhood today and plan to try that tomorrow.

NUTRITION

Each meal today was completely inspired by blog world!

I would have never in a hundred years thought to create these flavor combinations.. but then beautiful people and their amazing blogs & ideas came into my life.

First up: Cornbread for breakfast with Yogurt (of the Goat’s kind) and Nut Butter.. I bet you can guess who inspired this… yup.. the fantastic HEAB again! ..

I re-heated a slice of Pumpkin Cornbread, then topped it with Goat’s Milk Yogurt, Homemade Healthy Pumpkin Butter and Chocolate Peanut Butter Sauce (~1/2 of 2 tbsp Peanut Flour + 1 tbsp Raw Cacao Powder + ~2 tbsp H20).. so so good!

Dinner was inspired by Bobbi’s, of N’ Her Shoes, Cran-Apple & Swiss Sandwich. I used a low-carb wrap, 1 tbsp We Can’t Say It’s Cheese Cheddar Sauce, deli Turkey, a little fat-free Feta, dried Cranberries and ~1/2 sliced Granny Smith Apple. Then grilled it up on the Foreman. I completed the meal with a little Kale Salad and Carrot Sticks..

The delicious layers..

I was having a major Chocolate craving tonight.. thankfully I was prepared. The other night I made crockpot Spirited Butterscotch Hot Cacao, and had leftovers in the refrigerator. It was equally as good chilled, and perhaps even better served in a cocktail glass.. just for fun..

What are some of the foods or flavor combinations that the blogosphere introduced to you? For me the flavor combinations are endless but some of the specific foods include Kale, Kabocha, Seitan, and Chia Seeds!

I think there is enough "chill" in the Texas air for Spirited Butterscotch Hot Cacao :)

Hope you're finally getting settled in Austin – are you excited about the big game tomorrow ? I am, however being in Dallas, I am not looking forward to all the crazies on i-35 as I commute home from work.

All your food looks amazing! It's so nice to see there are others out there that eat just like me. Pumpkin YUMM!! Sadly, in Canada, we have a hard time finding greek yogurt (but I make my own). Just a question you could help me with.. When you are working out, you seem to know just how many calories you burn. What is your net calorie total at the end of the day? Do you compensate?
