Workout Mojo & SP Protein Muffins

Hi all! I’m still alive :smile:, I’ve just been super busy with the new job, and in the process of digging myself out of a bit of a fitness rut :???:.

I’ve only workout out a handful of times since moving to Austin two weeks ago, and for no other reason than lacking a little motivation. But the last couple days, I’m starting to feel my workout mojo comingback.. does that make sense? Does that ever happen to you? A friend of mine (shouts!) refers to it as a fitness cycle.. I feel like I was at the bottom end, but now I’m on the upswing.

Related to that, I’ve been in major food prep mode the last couple days. I actually like working with a bit more of a rigid schedule, and it’s certainly easier to get back on track with eating when all I have is a packed lunch versus a kitchen full of endless possibilities when I’m working from home.

This evening I whipped up a familiar snack.. I didn’t follow a specific recipe, but it turned out great!

Sweet Potato Protein Muffins

1 medium Sweet Potato (mine ended up being ~300 g cooked)

2 scoops of a tasty Protein Powder (I used MGN Cake Batter Whey Isolate)

1/3 cup Egg Whites

~1/6 tsp Xantham Gum (not sure this made a difference)

Pumpkin Spice (or Cinnamon) to taste

Preheat oven to 350 F. Cook the Sweet Potato however you like (I microwaved). Mash it up a bit and put it in a food processor. Add the rest of your ingredients, and puree until smooth. Pour into muffin cups and bake for 25-30 minutes.

This made 5 large muffins. And the stats per muffin are as follows:

Yum.. and they’re even fall colored!

    your recipes always look AMAZING! Can't wait to try these. I think the body lets us know when it needs rest so it was probably good you had a little break. Now your ready to tackle the workouts!
