Apple a Day

Hope you all are having a wonderful weekend! So far mine has been great, but in order for it to stay that way, I actually need to get some work done today :roll:

Yesterday ended up being just how I like a Saturday to be: good workout, good food, football and friends.

I started the day running a few fun errands (oh how I love World Market.. if you haven’t been, they have a few of the fun Sugar-Free Syrups, including the current holiday flavors), and checked out a new Spin class. I haven’t done Spin in.. a couple months (hard to believe!).. and boy, I realized how much I’ve missed it. The instructor was incredibly quirky, but not in an annoying way. The class was definitely challenging and it felt good to push myself.

The rest of the day was filled with cooking (& eating :razz:), football watching (Cal was so close.. but glad to see them put up a fight) and just hanging out.

An Apple a Day

Lately I’ve been a little obsessed with apples. Fruit is one of those things that I really like, but tend to forget about it. Lately I’ve really been making an effort (as encouraged by my new nutrition plan) to get in 3 servings a day. Because fruit is so high in fiber and natural sugar, I’ve really notice a difference in staying full longer, while it also helps satisfy my crazy sweet tooth.

Yesterday’s Apple concoction was paired with one of my other favorites.. Kabocha!

I roasted a piece of Kabocha in the oven at 375 F for 40 minutes, then topped it with 1/2 cup Cottage Cheese (mixed with Cinnamon) and 1/2 an Apple.. yum!

It’s that time of the year again.. so much good holiday food, but only so much you can eat before pants start feeling a little snug. Fortunately there are endless healthy substitute options to help avoid post-holiday guilt or my-pants-shrunk syndrome. Here are a couple, with lots more to come..

    I am a huge apple fan! I eat one every morning and will sometimes snack on one with cinnamon after dinner for a treat. Love them and they are so good for you!

    I am LOVING fruit lately too well I always love fruit, but its so fun to find new ways to eat it! I love the idea of kabocha squash in there!! (ahem, still havent tried it, ahem!) dont hate me!

  6. I mix cinnamon or pumpkin pie spice or other goodies in my non-fat Greek yogurt & dip my apples slices or pear slices in that.. love it!!! You can also bake them or microwave too…. little brown sugar!!!

    I tend to eat pretty healthy even at the holidays but save for a treat! :-)

  8. I’ve never combird apple and cottage cheese together but it would probably be similar to my plain yogurt and apples. Just can’t get enough of that stuff!
