Hi all! Hope your week is flying by! Last weekend I was in Baltimore and had a blast. There was so much I should have taken pictures of, or perhaps better said, there was so much that was totally picture-worthy, but instead I just enjoyed the time with great friends. In a way it really was my Christmas weekend. As I’ve mentioned, I’m staying in Austin for the holidays, and trying not to be too bummed about missing the family traditions. Last weekend however was filled with group dinners, cookie baking, christmas movies, decorating, cookie parties, holiday-themed drinks (Baileys + Peppermint Schnapps = amazing), and killer workouts.. all with a little snow on the ground to make it feel like the holidays.
Back in Austin, its been a busy few days. But just wanted to share a lovely breakfast I whipped up this morning..
Oat Pancake with Cinnamon Apples and Sausage
For the pancake I just blended a 1/4 c of Oats into Oat Flour, then mixed in 3 tbsp Egg Whites, 1/2 tsp Cinnamon, 1/4 tsp Baking Powder and 1 tbsp Protein Powder.
Then I mixed together 1/2 chopped Apple tossed with Cinnamon and a Chicken Sausage, and microwaved it for 2 minutes.. then of course all topped with a drizzle of 0-calorie Maple Syrup.
Protein + Whole Grain Carbs + Fruite .. a lovely, well rounded breakfast!
Edit: oh finally updated the Workout Tracker.. I got my ass kicked.. literally.. at a Kickboxing class on Saturday.. love it! ![]()

I’m thinking you need write a cookbook just for pancakes and bread, you seem to be the master at them! Lovely!

Very interesting!! I love that chicken sausage but I try not to get it too much anymore since its rather high in sodium…I used to eat it like 4x a week. But it is soo good sauteed!
