The Best Start

Heeyyyy! So where did I last leave you.. because a whole hell of a lot has changed in a week! Ok fine, maybe not a lot, just one really big thing.. and if you follow me on Facebook or Twitter you probably already know.. I GOT A JOB!

pheww! Ecstatic would probably be the best word to capture my feelings.. and it’s been quite the whirlwind week. I accept the position on Monday and started working on Wednesday. The last few days have been filled with learning new systems and getting familiar with the company. It’s all good, because I’m loving everything.. and just feeling so thankful.. couldn’t have asked for a better start to the new year!

FITNESS

err, ahh.. things had been going really well, but my abrupt re-entry into the real working world has left me a little drained by the end of the day and I’ve missed a few workouts. Ideally I would get my self up early and workout in the morning. That hasn’t worked out (pun intended) quite yet. I’m giving myself a little reprieve this week, but no excuses next week (or this weekend for that matter!).

I finally ended up joining a gym here in Austin, which has really made all the difference! I was at a near all time low with fitness motivation, partially from just being so bored working out in my apartment’s gym. I even found a good Spin class on the first try, and am looking forward to trying their Kickboxing classes.

NUTRITION

Even if a few workouts have been missed, I am so happy to report that nutrition has been spot on!

A few fun items from the past week..

So one of my food quirks (as Julie calls them) is my pickyness (sp?) when it comes to fruit. I am crazy particular with it being just right; so much so, in fact, that I won’t eat an apple whole but have to slice it up to make sure I get rid of all the bruises. But besides that oddity, I really do love apples :p. Case(s) in point..

1/4 c Oatmeal topped with 1/2 c Plain Greek Yogurt, Apple and PB Flour Maple Dip (2 tbsp Peanut Flour + 1 tbsp calorie-free Maple Syrup + 1 tbsp Unsweetened Almond Milk)..

And 1/2 c 1% Lactaid Cottage Cheese topped with 1/4 c raw Oats, Apple and PB Flour Maple Dip ..

I suppose my not-so-minor Squash obsession could also be considered a quirk, haha.. this combination was awesome, in fact I wasn’t going to take a picture but then after a few bites decided I had to share it with you all..

1/2 Delicata Squash stuff with 2 oz Chicken Breast, 1/4 c Cottage Cheese, topped with Salsa, Avocado and a sprinkle of Nutritional Yeast..

Updates, updates! I’m looking forward to catching up on blogs this weekend, but tell me, how was your first full week fo the new year?!

      Just 24 hr.. The one right by me is pretty crummy but another pretty close (Parmer) is great! And I definitely think we need to plan another get together soon.. maybe a weekend lunch? I’ll send an email!

    you need to teach me yours ways about squash….I wish they were easier to make! I just have no patience but whenever i see your pics I want squash that instant!!

    do you find that you digest the lactaid cottage cheese better than the regular kind?? dairy has been giving me some digestive issues lately and I am thinking about that lactaid CC

      So squash.. sometimes I roast it.. but the quick method is to dice it up into a bowl cover with a damp paper towel and microwave for 8-10 min. or slice in half, remove the seeds then place face down in a pan with ~1/4″ h20 and microwave for 8-10!
      I actually don’t notice a huge difference with the Lactaid, I actually just like the taste better, haha.. oh, and I’m on the waitlist for camp.. if I can’t make this one, I might do the 1-day in February,, jeep you posted!

  5. Big congrats on the job!!!! It takes time to get that schedule right because yes, days can be tiring! I am a 24 hour fitness person too & like that I can go whenever I want! :-)
