			<content:encoded><![CDATA[<p>Hi everyone! Wow, it&#8217;s been forever.. lots of updates for you.. but for this post I just wanted to share a couple of new (or revised) favorites!</p>
<p>My pumpkin obsession is no new thing.. <a href="http://www.nourishedfitness.com/food/fitness-recipes/">proof</a>.. and I couldn&#8217;t let November pass without a couple recipes for ya!</p>
<p>But first..</p>
<p><strong><em>It&#8217;s All About the Powder!</em></strong></p>
<p>Alright, ya&#8217;ll know I love my various protein powder concoctions. I get asked all the type what protein powders I use.. and it all depends. Some are good for pancakes and protein bars, while I prefere others for shakes. And even then it&#8217;s different for sweet chocolaty shakes versus my beloved Green Smoothies.</p>
<p>For my morning Green Smoothie, my number one favorite is <a href="http://www.iherb.com/Olympian-Labs-Inc-Pea-Protein-Vanilla-Flavor-1-lb-12-32-oz-805-gm/13966?at=0" target="_blank">Olympian Labs Vanilla Pea Protein</a>, I also love Vega Sport (I think the one I used just got discontinued but they have a new product that looks good) and <a href="http://www.iherb.com/Genuine-Health-Corporation-Vegan-Proteins-Natural-Vanilla-29-oz-840-g/27013?at=0" target="_blank">Genuine Health&#8217;s Vegan Proteins</a>.</p>
<p>Now pancakes.. How they come out depends a lot on the protein powder you use. I love Pea Protein for my Green Shakes, but have had horrible results with it in pancakes. My very favorite powder for pancakes is <a href="http://www.muscleandstrength.com/store/muscle-gauge-whey-protein-isolate.html" target="_blank">Muscle Gauge Whey Isolate in Cake Batter</a>.</p>
<p>Ok, onto the good stuff..</p>
<p><strong><span style="text-decoration: underline;">Pumpkin Gingerbread Protein Shake</span></strong></p>
<p>Inspired by <a href="http://ohsheglows.com/2011/10/12/pumpkin-gingerbread-smoothie/" target="_blank">Angela&#8217;s recipe</a>.</p>
<p style="padding-left: 30px;">1/3 cup Pumpkin</p>
<p style="padding-left: 30px;">1/2 frozen Banana</p>
<p style="padding-left: 30px;"> 1 scoop Protein Powder (my fave is Olympic Labs Pea Protein)</p>
<p style="padding-left: 30px;">1 tsp Cinnamon</p>
<p style="padding-left: 30px;">1/2 tsp Gingeer</p>
<p style="padding-left: 30px;">3/4 Unsweetened Almond Milk</p>
<p style="padding-left: 30px;">Ice</p>
<p>Blend. Enjoy.  Particularly awesome with a little Peanut Flour sprinkled on top!</p>

<p><strong><span style="text-decoration: underline;">Even Better Pumpkin Protein Pancakes</span></strong></p>
<p>&nbsp;</p>
<p>Makes 4-5 pancakes:</p>
<p style="padding-left: 30px;">4 scoop Protein Powder (used <a href="http://www.muscleandstrength.com/store/muscle-gauge-whey-protein-isolate.html" target="_blank">my fave)</a></p>
<p style="padding-left: 30px;">1/2 cup Pumpkin</p>
<p style="padding-left: 30px;">1 tbsp Oil (I&#8217;m loving using Hemp Oil, but Coconut would also be great)</p>
<p style="padding-left: 30px;">3/4 cup Egg Whites</p>
<p style="padding-left: 30px;">2 tsp Baking Soda</p>
<p style="padding-left: 30px;">2 tsp Pumpkin Spice</p>
<p>Blend with a hand mixer, than pour ~1/3 cup into a pre-heated pan. yummm</p>

<p>As I watch this I&#8217;m watching the ladies rock the Fitness America stage! I&#8217;m seriously being blown away by the level of competition this year.. so awesome, not to mention crazy inspiring.</p>
<p>I can&#8217;t believe it was two whole years ago that I was up there.. sighh.. Think I&#8217;ll do an extra functional workout or two tomorrow.. ;-)</p>

<p>And another thing.. <a href="http://www.onefitfoodie.com/" target="_blank">HUGE CONGRATS to Naomi</a> who looked absolutely amazing and completed rocked her Bikini competition this weekend and came home with hardware to prove it! This girl inspires me everyday.. and I am so excited to meet her in-person.. I&#8217;m thinking much sooner than later  <img src='http://www.nourishedfitness.com/wp-includes/images/smilies/icon_wink.gif' alt=';-)' class='wp-smiley' /> </p>

<p>At the risk of jinxing it.. but hoping that by throwing that out there I negate the jinx.. I&#8217;ve been getting back into lifting on a regular basis, and loving it! In fact I re-signed up with <a href="http://cathysavage.com/" target="_blank">Cathy Savage Fitness</a>. I&#8217;m super excited that a friend is doing it with me, so we&#8217;ve been working out together and encouraging one another. What a difference it makes! Even when I was training for my last show, and technically on a team, I never really worked out with anyone. But the combination with working out with a friend and being a part of CSF, it already feels like a different, really positive, experience.</p>
<p>Which begs the competition question.. And the answer is, I&#8217;m not sure yet.. just taking it one day.. week.. month at a time and will see what I feel like when I get closer to that point.</p>
<p>So for right now you&#8217;ll find me limping around and struggling to lift my arms.. oh but it&#8217;s such a good sore!  <img src='http://www.nourishedfitness.com/wp-includes/images/smilies/icon_biggrin.gif' alt=':-D' class='wp-smiley' /> </p>
<p>But yoga is still priority. My goal is to get in at least 3 classes a week. I know if I can keep that up I won&#8217;t feel like I&#8217;m &#8220;sacrificing&#8221; yoga for lifting, and it will be so beneficial to weight-training.</p>

<p>Speaking of yoga, I&#8217;m going to be doing a little Artistic Yoga demo with the amazing ladies of <a href="http://balanceyogaaustin.com/" target="_blank">Balance Yoga</a> at the <a href="http://www.austinyogafestival.com/" target="_blank">Austin Yoga Festival</a>. Check out there website, and if you&#8217;re if you&#8217;re around central Austin you should definitely come!</p>

<p>Nutrition-wise everything is going great. I&#8217;m getting use to being more specific with my meal planning again (in line with the CSF plan), but I wasn&#8217;t too far off, so really it&#8217;s just being sure to eat enough!</p>
<p>I&#8217;ve said it once, twice, a hundred times.. eating healthy is seriously all about being prepared! During the week I&#8217;m a usually really busy and have no interest spending time figuring out what to eat, then having to make it. So I do all the work on Sundays. I usually will make 2-3 full dishes, cook up proteins, and have additional veggies prepped ready to mix it. On this week&#8217;s prep menu I have:</p>
<ul>
<li>Un-Potato Salad with Chicken Sausage</li>
<li>Greek Quinoa Salad</li>
<li>Roasted Garlic Cassoulet</li>
<li>Harvest Muffins</li>
</ul>
<div><span style="text-decoration: underline;"><strong>Un-Potato Salad</strong></span></div>
<div>Ok basically this is Cauliflower &amp; Onions with whatever other mix-ins you like.. but that name just isn&#8217;t as fun! This was actually the base for <a href="http://www.nourishedfitness.com/2011/08/27/reminders-and-recipe/" target="_blank">Cheesy Cauliflower &amp; Kale Salad</a> that I posted a while back.</div>
<div style="padding-left: 30px;">1 medium Cauliflower Head</div>
<div style="padding-left: 30px;">1 Onion</div>
<div style="padding-left: 30px;">2 tbsp Apple Cider Vinegar</div>
<div style="padding-left: 30px;">1 tsp Salt</div>
<div style="padding-left: 30px;">1/2 cup Water</div>
<p>Chop up Cauliflower to whatever size you like. Toss into a microwave bowl and add a splash of water. Microwave for 7 minutes. Now chop Onion and sauté in a large skillet for a few minutes. Add Vinegar, Salt and 1/2 c of Water and cook for a few more minutes until water cooks off. Mix together Cauliflower and Onion mixture.</p>

<div><span style="text-decoration: underline;"><strong>Greek Quinoa Salad </strong></span></div>
<div>This recipe was inspired by a feature in the Livestron Newsletter.</div>
<div style="padding-left: 30px;">1 cup Quinoa</div>
<div style="padding-left: 30px;">2 cups Water</div>
<div style="padding-left: 30px;">1 Red Onion, chopped</div>
<div style="padding-left: 30px;">3 cups Baby Spinach</div>
<div style="padding-left: 30px;">3 Roma Tomatoes, chopped</div>
<div style="padding-left: 30px;">1/2 tsp Salt</div>
<div style="padding-left: 30px;">Option: 1/2 cup Fat-Free Feta (not included in stats)</div>
<p>Cooke Quinoa stovetop until most of the water is gone. Add Salt and Spinach, and continue cooking until Spinach is soft and water is gone. Remove from heat. In a separate pan saute Onion to desired texture (you could leave the Onion raw too). Mix Onion in with Onion mixture. Let this cool. Once cool, stir in Tomatoes. Add protein (I thinking shrimp might be great) for a complete meal.</p>

<div>Ya&#8217;ll know I&#8217;m a breakfast/baked goods gal! I love making a big batch of muffins, freezing them, and having them as a quick go-to option for a healthy carb.</div>
<div><strong><span style="text-decoration: underline;">Harvest Muffins</span></strong></div>
<div>These were inspired by a recipe in Cooking Light&#8217;s, &#8220;Cooking Through the Seasons&#8221;</div>
<div style="padding-left: 30px;">1 cup Almond Flour (or Whole Wheat or Spelt)</div>
<div style="padding-left: 30px;">1 cup Vanilla Protein Powder (I used Whey)</div>
<div style="padding-left: 30px;">4 tsp Cinnamon</div>
<div style="padding-left: 30px;">2 tsp Baking Soda</div>
<div style="padding-left: 30px;">1/2 tsp Salt</div>
<div>
<div style="padding-left: 30px;">1 medium Carrot, finely grated</div>
<div style="padding-left: 30px;">1 medium Zucchini, finely grated</div>
<div style="padding-left: 30px;">1 medium Apple, coarsely grated</div>
<div style="padding-left: 30px;">2 tbsp Oil (I used Hemp Seed Oil, but whatever you like to bake with would work)</div>
<div style="padding-left: 30px;">1/2 cup Unsweetened Almond Milk</div>
<div style="padding-left: 30px;">1/3 c Egg Whites</div>
<div style="padding-left: 30px;">Optional: Chopped Nuts, Craisins or Raisins</div>
<p>Combine dry ingredients. Combine Carrot, Zucchini and Apple in a separate bowl, then mix in with dry ingredients. Mix Oil, Milk and Egg Whites in a separate bowl, then mix that in with the rest of your ingredients. Pour into Pam-sprayed muffin tins and bake at 350F for 20 minutes.</p>

<p>I must admit.. I was pretty darn boring <img src="http://www.nourishedfitness.com/wp-includes/images/smilies/icon_rolleyes.gif" alt=":roll:" /> .. the highlight was finding a great, fun Spin class. I found a workout buddy here in Austin who has inspired me to get back into taking fitness classes. I&#8217;d fallen off the wagon for a bit, but last week we took a Spin class together, and it was such a great reminder of how much I like Spin, and how it is 1000x better than boring ole machine cardio.</p>

So I&#8217;ve started trying other products looking for a good replacement for my beloved <a href="http://www.nourishedfitness.com/2011/01/23/someone-wants-to-say-hello/" target="_blank">Green Protein Smoothie</a>. Well this is a winner for sure! I haven&#8217;t tried in in a plain shake, but it&#8217;s perfect for blending in a green smoothie. It&#8217;s slightly sweetened with Stevia and not grainy at all!</p>

<p>Got in a good Shoulder &amp; Ab workout followed by 30 min. of Elliptical Resistance Hills.</p>
<p>So I have excessively strong opinions about the elliptical. If you&#8217;re pedaling away for more than 10 minutes and not breaking a sweat, you&#8217;re doing it wrong. If you&#8217;re on there for 60 minute and calorie burn isn&#8217;t pushing 500 (and I mean on a reliable source, not what the machine says.. it way overestimates).. I really want to stop and ask, &#8216;do you really not have anything better to do, because walking in circles in front of the TV at home is as much of a physical challenge?&#8217; Point being, you really can have a good cardio workout on the elliptical, but keeping the resistance high is key. If you have a machine that can also change incline, even better. But don&#8217;t make the mistake of thinking that having the incline as high as possible means you&#8217;re working harder. Working at a lower incline actually works more leg muscle, including that crucial glute area. So mix it up! My favorite is some sort of hill/interval course, but there are lots of ways you can play.</p>
<p>For an example of a good elliptical workout check-out the <a href="http://www.nourishedfitness.com/fitness/workout-tracker/" target="_blank">one I did today</a>. My cardio&#8217;s pretty out of sorts at the moment, so of course make adjustments to incline &amp; resistance according to your needs. It&#8217;s hard enough if your heart rate gets up and stays up. You should be nice &amp; sweaty by the end of this!</p>

<p><span style="text-decoration: underline;"><strong>Apple Cinnamon Protein Bread</strong></span></p>
<ul>
<li>4 scoops Protein Powder (I used MGN Cake Batter Whey Isolate) = ~1.33 cups</li>
<li>2/3 c Flour (I used Whole Wheat)</li>
<li>2 tsp Baking Powder</li>
<li>1/2 tsp Salt</li>
<li>3 tsp Apple Pie Spice (or Cinnamon)</li>
<li>1 cup plain Greek Yogurt</li>
<li>2 tbsp Oil (I used Canola)</li>
<li>1/2 cup Egg Whites</li>
<li>1 Apple, finely chopped</li>
</ul>
<p>Mix dry ingredients. Mix wet ingredients. Mix the two together then fold in Apple. Bake at 375 F for ~35 min. (watch it, I over-baked mine a bit).</p>

The weather here in Austin has been pretty crazy, so I can&#8217;t say it feels much like the holidays, but trying to make the best of it.</p>
<p>So where to begin.. so much has been going on, but at the same time I&#8217;m in this crazy limbo.. lots of potentially exciting things are up in the air, and only time will tell how it will all play out.</p>
<p>With all the distractions I&#8217;ve been all over the board with workouts. I&#8217;ll have a really good week, then not workout for 5 days. I did however finally make it back to Yoga last week, after a 90+ day absence, and of course it was amazing. Even after just one class, I notice an immediate difference in my mood, and that&#8217;s before the physical benefits.</p>
<p><em><strong>Dear Blog.. I miss you.. love Alyson</strong></em></p>
<p>On a different note, two separate occurrences this week made me realize how much I miss blogging on a regular basis. First, I was working on a Google Analytics report using blog statistics, second, and a bit more exciting (though I must admit I got more than a bit geeky playing with numbers and optimization stuff), was a blogger meet-up!</p>
<p>Over a month ago I met up with <a href="http://twentyfifthyear.com/" target="_blank">Caitlin</a>, who I absolutely adore, then yesterday I finally got to meet <a href="http://www.cottercrunch.blogspot.com/" target="_blank">Lindsay</a> and <a href="http://www.thesmartkitchenblog.com/" target="_blank">Sarah</a>. We all met up at a very hipster-esque cafe that made for excellent people watching. I was a total slacker and didn&#8217;t break out my camera, but check out <a href="http://www.thesmartkitchenblog.com/2010/12/christmas-time-is-here.html" target="_blank">Sarah&#8217;s post</a>! After the other two girls had to leave, Caitlin and I wandered up to the capital to listen to the carolers and watch them light the tree. Not going to lie.. I was a bit disappointed in the tree&#8230; but perhaps that&#8217;s just my born &amp; raised in the northwest, gorgeous green scenery everywhere attitude.</p>

<p>I was in a baking mood all day today, but restrained myself from a decadent treat that I would likely overindulge in (darn you emotional eating and missing not going home for the holiday), and instead opted for a bit of an experiment. Inspired by Tina&#8217;s <a href="http://carrotsncake.com/2009/11/sweet-potato-oatmeal-raisin-cookies.html" target="_blank">Sweet Potato Oatmeal Raisin Cookies</a>, I made..</p>
<p><span style="text-decoration: underline;"><strong>Sweet Potato Protein Cookies</strong></span></p>
<p style="padding-left: 30px;">1 medium Sweet Potato, baked/microwaved, mashed</p>
<p style="padding-left: 30px;">1/4 cup Protein Powder (I used MGN Cake Batter Protein Powder)</p>
<p style="padding-left: 30px;">1/2 cup Oatmeal</p>
<p style="padding-left: 30px;">2 tbsp Canola Oil</p>
<p style="padding-left: 30px;">Cinnamon to taste</p>
<p style="padding-left: 30px;">Stevia to taste</p>
<p>Mix everything together. Drop spoonfuls onto a sprayed baking sheet and bake at 350 F for 15-18 min.</p>

<p><em><strong>Truth</strong></em></p>
<p>I really do miss blogging, and everyday I think about perhaps posting that day, but with how all over the board I am with fitness and nutrition, sometimes I&#8217;m just not sure what to blog about. Truth be told, I guess I&#8217;m a bit embarrassed. I can&#8217;t believe it&#8217;s been a whole year since my competitions, and I regret that I&#8217;ve let myself get so far from where I&#8217;d like to be. I can&#8217;t wait to compete again, but there&#8217;s a couple things that need to work their way out first.. all that silly &#8216;I guess I&#8217;m a grown-up&#8217; stuff. But I think I&#8217;ve been using it as an excuse.. there really is no excuse not to be getting in my workouts.. and not for a narcissistic reason, but for the plain and simple truth that working out keeps me sane! haha..</p>
<p>So it&#8217;s a new week right?! And with only 3 weeks until Christmas I have lots of Christmas moving watching to do  <img src="http://www.nourishedfitness.com/wp-includes/images/smilies/icon_razz.gif" alt=":razz:" /></p>

I&#8217;m still alive <img src="http://www.nourishedfitness.com/wp-includes/images/smilies/icon_smile.gif" alt=":smile:" />, I&#8217;ve just been super busy with the new job, and in the process of digging myself out of a bit of a fitness rut <img src="http://www.nourishedfitness.com/wp-includes/images/smilies/icon_confused.gif" alt=":???:" />.</p>
<p>I&#8217;ve only workout out a handful of times since moving to Austin two weeks ago, and for no other reason than lacking a little motivation. But the last couple days, I&#8217;m starting to feel my workout mojo comingback.. does that make sense? Does that ever happen to you? A friend of mine (shouts!) refers to it as a fitness cycle.. I feel like I was at the bottom end, but now I&#8217;m on the upswing.</p>
<p>Related to that, I&#8217;ve been in major food prep mode the last couple days. I actually like working with a bit more of a rigid schedule, and it&#8217;s certainly easier to get back on track with eating when all I have is a packed lunch versus a kitchen full of endless possibilities when I&#8217;m working from home.</p>
<p>This evening I whipped up a familiar snack.. I didn&#8217;t follow a specific recipe, but it turned out great!</p>
<p><strong><span style="text-decoration: underline;">Sweet Potato Protein Muffins</span></strong></p>
<p style="padding-left: 30px;">1 medium Sweet Potato (mine ended up being ~300 g cooked)</p>
<p style="padding-left: 30px;">2 scoops of a tasty Protein Powder (I used MGN Cake Batter Whey Isolate)</p>
<p style="padding-left: 30px;">1/3 cup Egg Whites</p>
<p style="padding-left: 30px;">~1/6 tsp Xantham Gum (not sure this made a difference)</p>
<p style="padding-left: 30px;">Pumpkin Spice (or Cinnamon) to taste</p>
<p>Preheat oven to 350 F. Cook the Sweet Potato however you like (I microwaved). Mash it up a bit and put it in a food processor. Add the rest of your ingredients, and puree until smooth. Pour into muffin cups and bake for 25-30 minutes.</p>
<p>This made 5 large muffins. And the stats per muffin are as follows:</p>

<p style="text-align: center;"><strong><span style="color: #ff0000;">FITNESS</span></strong></p>
<p>Started the day working Shoulders &amp; Back with <a href="http://scottstrainingsystems.com" target="_blank">my trainer</a>. I am truly blessed to have found such a wonderful team. Competitive fitness is a funny world. I have met some of the most amazing, kind, inspiring people.. but there is a lot of sketchiness and bad things out there too. Whether it&#8217;s trainers who encourage their competitors to take &#8220;performance enhancing&#8221; supplements, or all sorts of mess-with-your-body fat-burners, or who are catty, unfriendly or inappropriate &amp; try to take advantage. I on the other hand, am surrounded by people who are supportive in all aspects of life. It&#8217;s not just about what you can do to look a certain way, but doing it in a healthy manner physically and psychologically.</p>
<p>This evening I also tried a new Spin class. I&#8217;d heard great things about this particular instructor, and was stoked that the class lived up to them!</p>
<p>Oh, and I got other good news today. A while back I tried signing up for the <a href="http://www.muscleandfitnesshers.com/superstar_camp_traning_pro/features/65" target="_blank">Muscle &amp; Fitness HERS Camp</a> in Las Vegas the weekend of NPC USAs, but it was already full. Today I got an email saying a spot had opened up! Of course originally I had planned to be competing that weekend, and now I&#8217;m just going to help out and cheer on, but the camp should be a blast! Nicole Wilkens-Lee along with fitness nutrition expert Kim Odo, and NPC judges will be there. I know I won&#8217;t be in my best shape ever by then, but I am excited for the opportunity to learn from the best of the best!</p>

She won the Arnold this year and the Olympia last year.. and she&#8217;s only had her pro-card since 2007 (got both Fitness &amp; Figure in the same show!).. ok, clearly she&#8217;s <a href="http://www.nourishedfitness.com/2010/04/04/motivation-crush/" target="_blank">another</a> motivational crush of mine <img src='http://www.nourishedfitness.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /> </p>

<p>MGN had been on backorder for ages, so I was excited to get these. Turns out they recently changed their formula, got all sorts of bad reviews about it, and have now switched it back to the original recipe. Unfortunately the batch I got is definitely the altered-formula :/ The difference is very obvious; it&#8217;s grainer and a completely different texture when mixed with egg whites from protein pancakes. Ahh well, still pretty good.</p>
<p>Breakfast was a Egg White Frittata (3/4 c Egg Whites + 1 tbsp Nutritional Yeast + 1 tbsp Salsa), then added 1/4 Avocado and 2 oz Baked Tofu, and topped with 1 tbsp of Hummus..</p>

<p>Drain noodles and pat with paper towel to remove excess water. Cut noodles to desired length. Mix noodles &amp; Tilapia and heat (either in the microwave or stove top). When noodle mixture is warm, stir in cheese mixture and heat until cheese just starts to melt. Enjoy!</p>

I followed her recipe exactly using Muscle Gauge Whey Isolate in Ice Cream Sandwich flavor (a new flavor for me, and I&#8217;m loving it), and 1 tbsp Hershey Special Dark Cocoa..</p>

<p><strong><span style="text-decoration: underline;">Fitness Luscious Lemon Cupcakes</span></strong></p>
<p>Makes 4 large Cupcakes</p>
<p style="padding-left: 30px;">1/4 c plain non-fat Greek Yogurt</p>
<p style="padding-left: 30px;">1/2 c 0-cal Sugar Substitute (I used Stevia in the Raw)</p>
<p style="padding-left: 30px;">1/4 c Egg Whites</p>
<p style="padding-left: 30px;">3 tbsp Sugar-Free Lemon Syrup OR Lemon Juice (I just didn&#8217;t have the fresh version on hand)</p>
<p style="padding-left: 30px;">2 scoops Cake Batter or Vanilla Protein Powder</p>
<p style="padding-left: 30px;">1 tsp Baking Powder</p>
<p style="padding-left: 30px;">2 tbsp <a href="http://nourishedfitness.theopenskyproject.com/organic-cold-pressed-coconut-oil-30-oz.html" target="_blank">Coconut Oil</a></p>
<p>Pre-heat oven to 350 F. Mix together Yogurt, Egg Whites, Sugar-substitute and Lemon. In a separate bowl mix Protein Powder and Baking Powder. Combine wet &amp; dry ingredients, then stir in Oil. Pour into muffin tins coated with cooking spray. Bake for 25 min. or until golden brown.</p>

<p>Last night I made a new &#8220;ice cream,&#8221; and oh my, this is a huge improvement. Heating the Almond Milk and blending in Xanthan Gum completely changes the texture to make it much more creamy and thick. This is a must try!</p>
<p><strong><span style="text-decoration: underline;">Chocolate Almond Milk Ice Cream</span></strong></p>
<p style="padding-left: 30px;">2 c Unsweetened Vanilla Almond Breeze (UVAB)</p>
<p style="padding-left: 30px;">1 c Sucant (0-cal Sugar Substitute)</p>
<p style="padding-left: 30px;">1/4 c <a href="http://www.navitasnaturals.com/products/cacao/cacao-powder.html" target="_blank">Raw Cacao Powder</a></p>
<p style="padding-left: 30px;">1/2 tsp Vanilla Extract</p>
<p style="padding-left: 30px;">1/4 tsp Xanthan Gum</p>
<p style="padding-left: 30px;">Add-In: Chopped Pecans/Walnuts/Almonds</p>
<p style="text-align: left;">Combine 1 c UVAB, Sugar &amp; Cacao in a saucepan over medium heat. Whisk to get the sugar &amp; cacao to dissolve. Bring mixture to a slow boil. Remove from heat and let sit for a minute. Mix in the rest of the UVAB and Vanilla Extract. Pour into a blender, add Xanthan Gum and blend for a minute. Pour into Ice Cream Maker and let it do it&#8217;s thing for 30 minutes or so. Add chopped nuts at the very end. Enjoy half and freeze the rest (makes 2 servings).. or enjoy half and go back 20 minutes later to finish it off :p</p>

<p style="text-align: left; padding-left: 30px;">1 tbsp 0-cal Maple Syrup</p>
<p style="text-align: left; padding-left: 30px;">2 tbsp UVAB</p>
<p style="text-align: left;">Mix together. At UVAB slowly until you reach desired consistency.</p>
<p style="text-align: left;">This second recipe I got from my friend <a href="http://www.scottstrainingsystems.com/competitor_kyla_rojas.php" target="_blank">Kyla, a fellow STS Figure girl</a>. She brought these to the clean eating potluck I went to a week ago, and I just loved them.</p>

<p style="padding-left: 30px;">1 cup Oats</p>
<p style="padding-left: 30px;">1 cup Egg Whites</p>
<p style="padding-left: 30px;">½ cup Fat Free Cottage Cheese</p>
<p style="padding-left: 30px;">1 scoop Protein Powder</p>
<p style="padding-left: 30px;">2 packets Stevia or Splenda</p>
<p style="padding-left: 30px;">1 tsp Baking Powder</p>
<p>Optional Add-Ins:</p>
<p style="padding-left: 30px;">2 Bananas</p>
<p style="padding-left: 30px;">½ cup Pumpkin</p>
<p style="padding-left: 30px;">½ cup All Natural Nut Butter</p>
<p style="padding-left: 30px;">½ cup Blueberries</p>
<p>Mix all ingredients together. Choose an Add-In. Bake at 350 F for 25 minutes. Recipe makes 12 muffins.</p>
<p>I ended up making 6 plain muffins and 6 with blueberries.</p>

<p>So you know  have <a href="http://nourishedfitness.theopenskyproject.com/" target="_blank">an OpenSky shop</a>, but I&#8217;ve been a bit of a slacker about promoting it. I love the idea behind the OpenSky concept, and whenever I click around the many shops on the site I always find cool things recommended by other bloggers. I actually was one of the early shopkeepers, and at first it was a little frustrating with regards to getting the products I wanted, but since I&#8217;ve been so busy with school and YNL the last couple months, OpenSky has really grown and are adding all sorts of wonderful features that are beneficial to both shopkeepers getting items they want in store, and for shoppers to stay connected, get discounts and make recommendations and give feedback.</p>

I talk a bit about the benefits of Nutritional Yeast <a href="http://www.nourishedfitness.com/2010/02/08/be-present-and-eat-protein-cheesecake/" target="_blank">here</a>, and my favorite use of it is for Humnut Sauce (2 parts Hummus + 1 part Nutritional Yeast + H20 to think) to use as a cheese substitute on pizza, toast, or nachos (drizzled over Kale Chips = awesome)!</li>
<li><strong><a href="http://nourishedfitness.theopenskyproject.com/vpx-zero-carb-protein-graham-cracker.html" target="_blank">VPX Zero-Carb Protein Powder in Graham Cracker Flavor</a>: </strong>I was so happy to get this product in. As you know I do pretty low-carb diets sometimes, and this product makes it so much easier. I tend to invest in Protein Powders that I can use for all sorts of things, and this is great for Shakes, Pancakes and mixed in with plain Greek Yogurt!</li>
<li><strong><a href="http://nourishedfitness.theopenskyproject.com/nuttzo-pf-peanut-free-one-jar.html" target="_blank">Nuttzo (the PB-free variety)</a></strong>: I raved about this before, and was so happy to find that they now make a peanut free variety! Even though PB is great, I actually prefer other nut butters.</li>

So yes I&#8217;m a Fitness &amp; Nutrition blog, but you gotta eat all that nutritious food on something right?! I fell in love with both of these lines as soon as I saw them, and frankly, I can&#8217;t decide which I personally want to get first!</li>

<p><strong><em>The Usual..</em></strong></p>
<p>My usual planned out schedule of school, workouts and work has gone out the window the last week. And I have to say, even the control freak in me has to admit it&#8217;s been kind of nice. I&#8217;ve just been enjoying time with friends, working out (but not on a set schedule), and working a lot on stuff for <a href="http://www.nourishedfitness.com/health-coaching/" target="_blank">YNL</a>.</p>
<p>Oh, and did I ever tell you guys that I&#8217;m moving?! Just into a new apartment, but it&#8217;s the first time I&#8217;ll be living on my own (well with Killer too of course). That&#8217;s happening in a littler over a week, so I&#8217;m going through kitchen-clean-out right now.. so expect random food pairings and lots of protein powder (since I have so many darn tubs of if) in the near future.</p>

<p><strong> </strong>This stuff is tasty and crazy convenient. You can actually measure the water in the packets, and it comes out perfectly in the microwave. I also love that it&#8217;s a mix of Oats, Barley, Quinoa, Rye &amp; Wheat!</p>

Since PB2 is having serious order-placement issues, I finally tried FitNutz and OMG, SO glad I did! I ordered the Sugar-Free Chunky, Regular Creamy and a sampler pack.</p>

<p>I had to go through my various new product testing methods. First, is it good on it&#8217;s own?.. yes! I mixed 1 tbsp of the SF Chunky with ~1/2 tbsp H20, and really liked it..</p>
<p>Later on, a sampler packet (Regular Creamy) went in with a container of plain Greek Yogurt and a dash of Stevia.. and I&#8217;ve fallen in lust <img src='http://www.nourishedfitness.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
